Azerbaijan National Culinary Association

Since its inception up to today, our organization advocates all initiatives to strengthen friendship and co-operation between people, to expand cultural ties and to safeguard the examples of cultural heritage. It supports large projects aimed at the better recognition of people and the development of attitudes of mutual respect. Our organization is very active in the preservation of the flat culture, and has undertaken important measures by constantly supporting those relevant communities who transfer the knowledge from one generation to another.

Today, the cooking technique of flat bread is taught to young people, not only within the family, but also in the organizations that preserve the traditions of Azerbaijani culinary practices. It is also presented to those that attend the amateur chef courses. Young girls, in rural areas of Azerbaijan, who want to marry, usually have their cooking skills tested, whereby they are asked to cook a flat bread (typically lavash). There is also a tradition to distribute a flat bread, or a halva, to neighbors during holidays, at the birth of babies within a family and when individuals' dreams come true. At the same time, flat bread tradition is considered as a symbol of friendship and mutual support in the family and amongst neighbors and relatives. It embodies a public unity. Flat bread practice is one of the core practices enacted by the Azerbaijani people at holidays, wedding ceremonies and funerals.

In this regard, we applaud the project for the inclusion of the flat bread tradition into the UNESCO Representative List of Intangible Cultural Heritage. It may be considered as an example of the shared cultural heritage and known by various names such as 'lavash', 'yutka', 'katirma' or 'jupka', and as a joint initiative of Azerbaijan, , , Iran and . We also offer our assistance to, in the future, promote and safeguard this shared cultural practice.

Since my early childhood, I always saw people cooking in our village and by my family. My grandmothers, my mother and now, my daughters, cook flatbreads Iavash once a week. Although the majority of families cook them in our village, the women usually have to give a gift of a cooked to their neighbors in order to receive their blessing.

It is very pleasing for me to note that schoolgirls, as well as young students studying in Baku, learn from their masters the secrets of baking flatbreads when they return to their villages for their summer vacation. This is a clear example of the continuation of our ancient traditions. A freshly cooked flatbread Iavash is a must on tables during family celebrations, wedding ceremonies and holidays. This may also explain the reason why a baker's shop has still not been established in our village. In the past, villagers going to see their relatives in Baku and Sumgayit always carried a flatbread as a gift. Now, there is no need for that, because, today, you would not find any district in Azerbaijan which does not cook flatbreads.

I have been baking flatbreads for over 40 years. It turned into a necessity than a work in our family. Now, I am helped by my grandchildren. I teach them the secrets of cooking this ancient bread. Therefore, I cordially welcome and approve this initiative of presenting flatbread culture to be considered as a common example of intangible cultural heritage of Azerbaijan, Kazakhstan, Kyrgyzstan, Iran and Turkey.

The tradition of baking flatbreads known by various names such as - 'lavash', 'yufka', 'katirma' and 'jupka' and others are considered as examples of the common cultural heritage of Azerbaijan, Kazakhstan, Kyrgyzstan, Iran and Turkey, reflect the centuries' long relationship, natural integration and shared culture between peoples and states.

We are confident that the inclusion of flat bread, which has been preserved throughout the centuries and transferred diligently from one generation to another, is linked to the common culinary practices of all the five peoples. It is connected to the same traditions and ethnic-cultural perceptions in the UNESCO Representative List of Intangible Cultural Heritage, which will enhance the further rapprochement between Azerbaijanis, Kazakhs, Kyrgyzs, Iranians and Turks, as well as with the people of the Middle East, Minor Asia and . It will help to promote their national cultures and activate mutual integration.

We have no objection, taking these factors into account, to present the culture of flat bread to be included into the UNESCO List of Intangible Cultural Heritage, as it would be an example of the shared traditions of Azerbaijan, Kazakhstan, Kyrgyzstan, Iran and Turkey.

According to my opinion and life experience, bread and particularly, flatbreads are not only a type of food. This is an example of a great culture, ancient traditions and lifestyle preserved until our days. At the same time, the flatbreads mirror the unity, friendship and co-operation of all peoples living in Azerbaijan and our region.

I have learnt the traditions of flatbreads baking since my childhood. Usually, it recalls an ancient rite. My grandmother kneads and cuts it into slices. Then, my mother cooks it while sisters pile many lavash flatbreads pieces into one. Making of flatbreads has always been a small holiday for our family and neighboring women. They gather in one house and cook the lavash flatbreads together to put in separate rooms for drying and storage. Sometimes, this ceremony is accompanied by singing ancient songs. As a rule, some pieces of flatbreads cooked in one house are then gifted to neighbors. Its symbolic meaning is related to the sharing of abundance and richness of one house with others.

As a reflection of the flat bread making culture, I welcome the initiative of presenting this tradition in its forms 'lavash', 'katirma', 'yufka' and 'jupka' as a common example of intangible cultural heritage of Azerbaijan, Kazakhstan, Kyrgyzstan, Iran and Turkey for its inscription into the UNESCO List.

To the Ministry of Culture and Tourism of the Republic of Azerbaijan

Although the flat bread making tradition historically existed amongst several people of the world, they differed due to their cooking technique, rules of use and storage. In this context of diversity, we support the activities aimed at recognizing and promoting the flat bread culture known under the names 'lavash-yufka', 'katirma' and 'jupka', practiced by Azerbaijanis, Iranians, Kazakhs, Kyrgyzs and Turks. This similar technology is a part of the shared cultural heritage and qualifies it as an important and successful step to bring people closer, and to ensure the active exchange of national cultures. As a reflection of mutual recognition, all these factors will give additional impetus to the creation and strengthening of peace, prosperity and mutual respect between communities of the region.

Indeed, acting on this point, we have no objection to the inclusion of the flat bread tradition into the UNESCO Representative List of Intangible Cultural Heritage, and its presentation as a common element of Azerbaijan, Iran, Kazakhstan, Kyrgyzstan and Turkey.
