Welcome to Monzú Italian Oven + Bar

Monzú Monzù (Master Chef) comes from a Southern Italian version of “Monsieur.” In the Kingdom of Two Sicilies in the 1800s, the Monzù became an emblem of refined dining—to the point where no noble house was considered complete without both an aristocrat and a Monzù in residence.

It’s all about the dough Digestible and full of flavor, our proprietary, naturally leavened dough is crafted over five days. To achieve this unique flavor profile, we developed one strain of starter with apricots from a local farm and added a mother starter said to be more than 300 years old!—from the Neapolitan island of Ischia.

Chef Giovanni Mauro is proud to represent a strong legacy in Las Vegas restaurants, from his mother’s humble beginnings at Nora’s Cuisine(now the Mauro family’s flagship restaurant), the progressive Nora’s Wine Bar in Summerlin, to his original concept Old School Pizzeria in North Las Vegas.
