Catalunya THE Estate founded in 1975 by Manuel Sancho, noted Spanish recording impresario, upon purchase of a 17th-century convent property in the heart of the Penedès region. 100 acres of estate planted to local varieties plus Cabernet, and form the basis for an important production of both Cava and table .

DETAILS OF & : Xarel-lo (50%), Macabeo (20%), Parellada (15%) and Chardonnay (15%) Vineyards: Macabeo 10 hectares of which 3 are in goblet and 7 are trellised. Xarel-lo 5 hectares of which 1.5 are in goblet and 3.5 are trellised. Parellada 5 hectares of which 2 are in goblet and 3 are trellised. Chardonnay 5 hectares, all are trellised. Winemaking: Each variety is picked and fermented separately. The grapes are destemmed, cooled to 12°C, pressed pneumatically and alcoholic fermentation at 14-16°C, the Chardonnay is fermented in barrels of French for 8 weeks.
