    PLIEGO DE CONDICIONES DE LA DENOMINACIÓN DE ORIGEN PROTEGIDA PENEDÈS Este Pliego de Condiciones tiene por objeto regular las condiciones de uso y de cumplimiento por parte de los operadores para la utilización de la Denominación de Origen Protegida Penedès en la producción, elaboración, embotellado, comercialización, publicidad, y en todo aquello que haga referencia. 1. Denominación protegida 1.1. Nombre protegido "PENEDÈS", "Penedès" 2. Descripción de los productos 2.1. Características físico-químicas de los vinos Los vinos elaborados, amparados por la DOP Penedès, responderán a los tipos y las graduaciones alcohólicas volumétricas naturales establecidas en la normativa comunitaria vigente, tanto para los vinos como para los vinos espumosos. Los vinos, los vinos de licor de calidad tradicionales, los vinos de aguja de calidad, el vino de uva sobremadurada y el vino espumoso de calidad, elaborados y embotellados, amparados por la DOP Penedès, responderán a los tipos y características físico-químicas siguientes: 2. 1. 1. - Vino: En la elaboración de los diferentes tipos de vinos protegidos se tendrán que utilizar las variedades de Vitis vinífera relacionadas en el apartado 6. Blanco. Grado alcohólico volumétrico adquirido mínimo 9,5 % vol., Rosado. Grado alcohólico volumétrico adquirido mínimo 9,5 % vol.,. Tinto. Grado alcohólico volumétrico adquirido mínimo 11,5% vol., Vino elaborado por el método "dulce de frío". Vino elaborado con las variedades Chardonnay, Gewurtztraminer, Malvasía de Sitges, Moscatel de grano menudo, Moscatel de Alejandría, Riesling, Sauvignon Blanc, Merlot, y Viognier y Xarel·lo procedente de uvas maduras que presenten una riqueza natural mínima de 240 gr./litro de azúcar, fermentación parcial del mosto y posterior parada de fermentación mediante técnicas de frío, solas y complementadas por otras, sin adición ni edulcoración.
