Structure in Wine steiia thiAst What is Structure? • So what is this thing, structure? It*s the sense you have that the wine has a well-established form,I think ofit as the architecture ofthe wine. A wine with a great structure will often remind me ofthe outlines of a cathedral, or the veins in a leaf...it supports, and balances the fiuit characteristics ofthe wine. The French often describe structure as the skeleton ofthe wine, as opposed to its flavor which they describe as the flesh. • Where does structure come firom? In white wines, it usually comes from alcohol or acidity; in red wines, it comes from a combination of acidity and tannin, a component in the grapes' skins and seeds. Thus, wines with a lot of tannin (like cabernet) also have a lot of structure. Beaujolais is made from gamay which does not have much tannin. As a result, Beaujolais can lack structure; it feels soft, flat or simple in the mouth (though its flavors can certainly still be attractive). • While structure is hard to articulate, you can easily taste or sense it —^and the lack of it. • Understanding structure is critical to understanding any ofthe ''powerful" red varieties: cabernet sauvignon, merlot, syrah, nebbiolo, tempranillo, and malbec, to name a few. I just don't think you can understand these wines unless you understand structure, and how it frames and focuses the powerful rush of fruit. It adds freshness, and a "lightness" to the density ofripe fiuit. Structure matters when pairing wine and food. Foods with a lot of structure themselves— like a meaty, thick steak-need wines with commensurate structure (like cabernet), or the food experience can dwarfthe wine experience. -

Sugar 1.44 g/l · Acidity: 5.11 g/l Serve at: 59º F-63º F UPC: 1-85554 00054-3 Vineyard: All of the production is obtained from the Estate FINCA CAÑADA HONDA. The production area includes lime soils which are ideal for obtaining colorful wines. Also the sand textures of these lime soils benefit the ripening of the grapes. The vineyard is situated 800 – 850 meters above sea level with an N / SE orientation resulting in maximum sunlight exposure. Vinification: The wine making process without the use of sulfur means that the hygienic conditions have to been extreme during harvest season. The grapes are harvested solely by hand in small crates. Every effort is made to avoid breakage and bacteria attacks. The wine deposits are filled very briefly so as not to delay the delicate fermentation process. All elements that come in contact with this no sulfite added wine are subject to the most extreme hygienically conditions. Terroir: Mix of sandy and clay soils, with the presence of stones. Training system: The vines are guided by the Gullot doble system, although the vines are not held. This system enhances the airing of the vines, avoids the emergence of cliptogamic diseases. Also, a shading cover of the vegetation avoids the direct impact of the sun on the vines. Tasting Notes: Aromas of strawberry, stewed plum, vanilla custard, and baking spice with a bright, dry light-to-medium body and an interesting, medium-long , prune, and bittersweet chocolate finish with well-integrated tannins. -

Montsant (Designation of Origin or wine appellation), despite being a recently created wine appellation, has years of wine-making history to its name. Wine experts and press consider it to be an up and coming region and prestigious magazines such as “The Wine Spectator” have declared it to be “a great discovery”. The quality of Montsant wines is key to their success, as too is their great value for money. The prestigious Spanish wine guide, “Guia Peñin” agrees that “the quality of Montsant wines and their great prices make this region an excellent alternative.” In the United States, “Wine & Spirits” magazine have stated that “Montsant should be watched with interest”. Montsant wines appear in some of the most prestigious wine rankings in the World and they always tend to be the best priced amongst their rivals at the top of the list. The professionals and wineries behind the DO Montsant label are very enthusiastic. Many wineries are co-operatives with important social bases and the winemakers who make Montsant wines are often under 40 years old. We at the DO Montsant believe that youth, coupled with a solid wine-making tradition is synonymous of future, new ideas and risk-taking. www.vntgimports.com Vega Sicilia needs no introduction and is considered, by most, to be one of the top ten wineries in the world. They cater to a very select clientele in 85 countries, and even then only exports 40 percent of its limited production of 130,000 bottles a year. The other 60 percent is sold in Spain. The jewel in the winery’s crown, Vega Sicilia Unico, takes 10 years to produce. The Valbuena is not a second wine. Rather, it is a different expression that has aged for less time, and will drink sooner, than Unico. It is a wine that comes from the younger vines and, it is mostly made with the varieties of Tempranillo and Merlot, rather than Cabernet Sauvignon. Bodegas Alión was formed in 1986 as a winery which would be run independently to its big brother, the great Vega Sicilia. This 85-hectare wine estate was founded by the Álvarez family to provide a modern expression of Ribera del Duero wine. 35 hectares of the estate is located around the winery, with a further 50 hectares dedicated to Alión within the historic Vega Sicilia vineyards. Unlike Vega Sicilia, where we find a merging of the traditional and modern winemaking techniques, Alión is made using state-of-the-art equipment. Forward and uncompromising, these are wines with impressive frames and show an alternative side of Tinto Fino. Pintia realizes the desire of the Álvarez family to make the best Toro wine, a designation that gives wines body, exoticism, an explosion of aromas, and a modern personality and character. -
