PURIM : BREAK THE RULES BY JHOS SINGER

Cross-dressing, confusing good and evil, supporting the poor and indulging our friends, booing during the reading of a sacred text, wearing a clown nose while chanting scripture, and of course swilling demon rum –these are the earmarks of Purim. Purim is all about breaking the rules to better understand the rule, it’s about letting the cart careen a bit, in order to better appreciate the brakes. This drink mixes two into one: Queen Elizabeth’s favorite cocktail (gin and Dubonnet) meets a breezy Champagne cocktail (bubbly with a dash of rhubarb liqueur). Mixing them together is a little unorthodox but produces a fantastic quaff – perfect for Purim!

Mocktail Option: ginger ale, rhubarb bitters, orange wedge

HOW TO MAKE “BREAK THE RULES”

What you need: Rhubarb Ginger Liqueur Dubonnet St. Georges Botanivore Gin Crémant* Orange wedges or zest ribbons

*Crémant is basically Champagne that has been made anywhere but in the Champagne region – so it could be Californian, or French or from anywhere else!

What to do: 1. In an 8 oz. rocks glass add: 1/4 oz. Ginger Rhubarb Liqueur 1/2 oz. Dubonnet 1 oz. Gin 2. Stir 3. Add ice halfway up the glass 4. Top with a smooth crémant or Champagne 5. Express the oil from a ribbon of orange zest (you could also use another citrus) 6. Drop a small wedge or half round of orange (or the corresponding citrus of your choice to match the oil you expressed)

Serve and enjoy slowly!
