History of Scotch Whiskey
Scotch Whiskey The Gaelic "usquebaugh", meaning "Water of Life", phonetically became "usky" and then "whisky" in English. However it is known, Scotch whisky, Scotch or Whisky (as opposed to whiskey), it has captivated a global market. Scotland has internationally protected the term "Scotch". For a whisky to be labeled Scotch it has to be produced in Scotland. If it is to be called Scotch, it cannot be produced in England, Wales, Ireland, America or anywhere else. Excellent whiskies are made by similar methods in other countries, notably Japan, but they cannot be called Scotches. They are most often referred to as "whiskey". While they might be splendid whiskies, they do not captivate the tastes of Scotland. "Eight bolls of malt to Friar John Cor wherewith to make aqua vitae" The entry above appeared in the Exchequer Rolls as long ago as 1494 and appears to be the earliest documented record of distilling in Scotland. This was sufficient to produce almost 1500 bottles, and it becomes clear that distilling was already a well-established practice. Legend would have it that St Patrick introduced distilling to Ireland in the fifth century AD and that the secrets traveled with the Dalriadic Scots when they arrived in Kintyre around AD500. St Patrick acquired the knowledge in Spain and France, countries that might have known the art of distilling at that time. The distilling process was originally applied to perfume, then to wine, and finally adapted to fermented mashes of cereals in countries where grapes were not plentiful. The spirit was universally termed aqua vitae ('water of life') and was commonly made in monasteries, and chiefly used for medicinal purposes, being prescribed for the preservation of health, the prolongation of life, and for the relief of colic, palsy and even smallpox. -

Greenbar Distillery Co-founders, Litty and Melkon, began making spirits back in 2004 and people loved their flavorful concoctions. Then one day they made a new batch where the flavor of one ingredient was monumentally more pronounced. They checked their processes and reviewed their formulation but couldn’t find the cause, so they asked the supplier. He confessed; his team had accidentally sent a batch of organic produce. Intrigued, Litty and Melkon looked into this further. With the help of friends at UC Davies they discovered that organic plants are known to have more flavor because they have to work harder. They need longer roots and hardier leaves to survive. As a side effect they’re also packed with more flavonoids and antioxidants. Once they knew they couldn’t go back. Since 2008, all Greenbar Distillery products have been made with organic ingredients. Recipes From Philip Greene’s Smithsonian Associates Classic Summer Cocktails Seminar [email protected] Classic Highball 2 oz spirit 4 oz carbonated mixer Serve in a tall glass on ice. Garnish lemon or lime wedge/peel Moscow Mule 2 oz vodka ½ oz lime juice 4 oz ginger beer Add all ingredients to a copper mug (or rocks glass). Garnish with the lime hull. Audrey Saunders’ delicious riff on the Moscow Mule, the Gin-Gin Mule ¾ oz fresh lime juice 1 oz simple syrup 2 mint sprigs 1¾ oz Tanqueray London dry gin 1 oz homemade ginger beer* Shake all ingredients well, strain into a tall Collins glass filled with fresh ice. Garnish with a lime wheel, a sprig of mint and a piece of candied ginger. Serve with a straw. *Ginger Beer 1 gallon water 1 pound ginger root, peeled 4 oz light brown sugar or 6 oz light agave syrup 2 oz fresh lime juice Place the water in a sauce pan, bring to a boil. Cut the ginger into smaller pieces and mix this in a food processor with some of the hot water until the mixture resembles mulch. Then add this back into the pot of water, turn off the heat, cover, and allow it to steep for one hour. Once cooled, strain the mixture through cheese cloth or a sieve, extracting as much flavor from the solids as you can. Discard the solids. Add the lime juice and sugar/syrup, stir. Let cool, then transfer to bottle(s). Store in refrigerator. Note: this will not yield a conventional, carbonated ginger beer. -
