Cobb Salad with Roast Beef

Ingredients:

• 4 oz Chopped Romaine

• 4 oz Chopped Spinach

• 1 Tomato (Diced)

• 1 Avocado (Diced)

• 4 Slices Tofurky Roast Beef

• 1 (Diced)

Method: Mix all ingredients in a bowl and toss with Vegan Salad Dressing

Fresh Tomato & Mozzarella Salad

Ingredients:

• 3 Medium Tomatoes (sliced)

• ½ lb. Fresh Mozzarella (sliced)

• 2 oz. Fresh Basil (chopped)

• 1 oz. Extra Virgin Olive Oil

• ½ oz. Balsamic Vinegar

• Salt & Pepper to taste

Method: Take tomato slices and Mozzarella slices and alternate them onto your plate. Drizzle with EVOO and Balsamic Dressing, Season with Fresh Basil and S&P.

• 4oz. Sliced Fresh Mushrooms

• To Taste Dried Italian

• To Taste Granulated Garlic

Method: Gather Peppers, Onions, and Mushrooms, and Vegan . Take them to the Pizza Station and ask attendant to make you a vegan pizza with the ingredients you provide.

Toaster Waffle Sandwich

Ingredients:

• 1 Waffle

• 2 Frozen BOCA breakfast links

• 1 slice Vegan American Cheese or Cheddar Cheese

• 1 Apple (sliced thin)

• TT Cinnamon Sugar

• 1oz. Pancake Syrup

Method: Make a waffle in the waffle iron located next to the machines. Mean- while, microwave breakfast links until hot. Slice in half long ways. Take the apple and slice it into 6 thin slices removing the seeds. After all in- gredients are ready, make into a sandwich and sprinkle cinnamon sugar on top and dip in pancake syrup. Boca Burger Asian ‘Chicken’ Salad

Ingredients:

• 2 Boca Burger Patties

• 1-2 oz Veganaise

• 1/3oz. Dressing

• 1/4oz. Sesame Seeds

• 3oz. Fresh Shredded Leaf Lettuce

• 1 Orange (cut into segments)

• 2oz Shredded Red Cabbage

• 1oz. Scallions

• 1oz Chow Mein Noodles

Method: Take Patties and cut them into ¼ inch squares. Microwave for 2 minutes on HIGH or until hot. Meanwhile, gather the remaining ingredients in a bowl. After your boca squares have cooked, fold them into the bowl with the rest of the ingredients. Serve over a bed of lettuce.

Boca Burger ‘Chicken’ Lettuce Wrap

Ingredients:

• 2 Boca Patties (cut in strips)

• 2oz. Chopped Cucumbers

• 2oz Red Onion (sliced)

• 2 Radishes (10 thin slices)

• 1oz Extra Virgin Olive Oil

• 1/2 oz. Red Wine Vinegar or Balsamic Vinegar

• 4-5 Green Leaf Lettuce Leaves

Method: Take Boca Patties and Cut them into ¼ inch strips. Microwave for 2 minutes or until hot. Gather the remaining ingredients in a bowl and drizzle them with EVOO and vinegar. Add heated Boca Strips to the Bowl. Take the green leaf lettuce and roll the mixture in the lettuce to make the wraps.

Ingredients:

• 1 Boca Chicken Patty

• ¼ oz. Brown Mustard

• ¼ oz. Horseradish

• 1 Italian Sub Roll

• 2 pc. Leaf Lettuce

• 4 slices Tomato

• ¼ oz Shaved Red Onion

Method: Take 1 Boca patty and microwave for 2 minutes or until hot. Take hot patty to the deli station and have them make the rest of your sandwich.

Vegan Taco Salad

Ingredients:

• 4oz. Boca Veggie Crumbles

• 2oz Salsa

• 4oz. Chopped Leaf Lettuce

• 2oz. Black Beans

• 2oz Corn Kernels

• 3oz Red Pepper Strips

• ½ oz Fresh Cilantro

• 1/3oz Fresh Lime Juice

• 4oz Vegan Cheddar Cheese

• 1 plateful of Corn Tortilla Chips

Method: Take all ingredients except salsa and cilantro and microwave on HIGH for 2-3 minutes or until hot. Place on top of plateful of chips and top with salsa and shredded vegan cheddar cheese. Whole Wheat Boca Dinner

Ingredients:

• ¼ Cup Uncooked Whole Wheat Penne Pasta

• 6oz Spaghetti Sauce

• 2oz. Zucchini (half moon)

Vegan Burger Pizza

Ingredients:

• 1 Pizza Crust (16”)

• 4oz. Pizza Sauce (Glen Pizza Sauce is Vegan)

• 3oz Vegan Shredded Mozzarella

• 6oz Boca Meatless Crumbles

• 2oz Red Onions (sliced)

Ingredients:

• 1 Boca Burger

• 1oz Crumbled Bleu Cheese

• 2oz. Shredded Lettuce

• 2 Slices Tomato

• 1/2oz. Blackened Seasoning

Method: Go to Salad Bar and get crumbled bleu cheese. Take to grill and request a Boca Burger with Blackened Seasoning. Give your cheese to the associ- ate and have them melt it on for you.

Vegetable Chili with Boca Crumbles

Ingredients:

• 2oz. Red Bell Pepper

• 2oz. Green Bell Pepper

• 2oz. Zucchini

• 2oz. Yellow Squash

• 1oz. Red Onions

Tofurky Rachel Sandwich

Ingredients:

5 slices Tofurky Deli

2oz. Sauerkraut

1oz Vegan Mayonnaise

1/3 oz. Ketchup

1oz. Pickle Relish

2oz. Vegan Shredded Cheese (optional)

2 slices Marble Rye

Method: Mix mayonnaise, ketchup and relish in a bowl to create a 1000 Island Dressing. Grab the Tofurky meat and the cheese from the vegan re- frigerator. Take the bowl of vegan 1000 Island Dressing and the lunch meat to the Deli Station and ask them to make your vegan Rachel sandwich.

Ingredients:

• 1 Tofurky Beer Brat

• 2oz. Yellow Onion

• 2oz. Red/Green Bell Pepper

• Salt & Pepper to taste

• 2oz H20

• Splash Apple Cider Vinegar

• 1 Italian Sub Roll

• 1oz Brown Mustard

Method: In a bowl, place your peppers, onions and bratwurst. Place water and vinegar in bowl. Cover and microwave for 2-3 minutes or until HOT! Place on Roll and top with Brown Mustard.

Boca ‘Chicken’ Parmesan Sub

Ingredients:

• 1 Boca Chicken Patty

• 4oz. Tomato Sauce

• 4oz Shredded Vegan Mozzarella Cheese

• TT Fresh Basil (chopped)

• 1 Italian Sub Roll

Method: Microwave breaded Boca patty until HOT (2-3 minutes). While patty is heating, grab the vegan cheese from the vegan refrigerator and a sub roll from the deli. Take hot patty and cheese to the pizza station and have the pizza attendant top with Tomato Sauce and melt the cheese in the oven. Put on Roll and Enjoy. Vegetable Puttanesca

Ingredients:

• 2oz. Mushrooms (sliced) • 2oz. Zucchini (half moon)

• 2 oz. Yellow Squash (half moon) • 1 Medium Tomato (diced)

• 1oz Yellow Onion (julienne) • ½ oz. Black Olives

• 1tsp. Dried Oregano • 1tsp. Garlic Powder

• ½ oz. Capers • 4oz Tomato Sauce

• Salt & Pepper to taste • Red Pepper Flakes to taste

Method:

Combine all ingredients into a bowl. Cover with plastic wrap and microwave for 5 minutes. Uncover, and stir BE CAREFUL, contents in bowl will be hot.

Vegan Boca Nachos

Ingredients:

• 6oz. Boca Meatless Crumbles

• 2oz. Salsa (Thick N Chunky)

• 20 Corn Tortillas

• 2oz. Shredded Vegan Cheddar

• 2oz. Black Beans

• 2oz. Corn

• 2oz. Tomatoes (chopped)

• 4-5 Jalapeno (sliced)

Method: Gather Ingredients and place them in a bowl on TOP of the corn tortilla chips. Put Cheese on top so it can melt when heated. Microwave in HIGH for 3-4 minutes or until contents of bowl are HOT. CAUTION: Bowl May Be HOT!

9 Glen Vegan French Dip Sandwich

Ingredients:

• 6 slices Tofurky Roast Beef

• 1 slice Vegan American Cheese

• 1ea. French Baguette

• 2pc. Leaf Lettuce

• 2 slice Tomato

• 2 slice Red Onion

• 1tsp Vegetable base

• 1C. Water

Method: Gather Tofurky Roast Beef and slice of cheese. Take to deli and request them to make the Sandwich. Then, ask for a tablespoon of vegetarian base and put it in a bowl with 1 cup of water. Microwave in High until water is HOT and base is dissolved (may need to be stirred). After you receive your sandwich, enjoy with dipping in your vegetable au jus.

Vegetarian Boca Burger Sub

Vegan (depending on choice of cheese) Ingredients:

• 1ea Boca Burger

• 2 slice Cheddar Cheese or 2 Slices Vegan American

• 1oz. Veganaise

• 2 pc. Leaf Lettuce

• 2 slices Tomato

• 2 slices Red Onion

• 2oz. Chips

• 1 Sub Roll

Method: Gather Boca Burger and request Grill attendant to cook it and Melt cheddar Cheese on top. Take HOT boca burger over to the deli station and request the makings for your cheeseburger sub. Grab some Potato Chips and enjoy. Grilled Italian Tofurky with Asparagus

Ingredients:

• 1ea. Italian Tofurky Sausage

• 2oz Asparagus

• 2oz Sauteed Yellow Onions

• 1oz. Balsamic Vinegar

• 4oz. Spring Mix

Method: Gather Tofurky Sausage form Vegan refrigerator and request that the grill attendant grills it off to get it HOT. Meanwhile gather your sautéed onions, and lettuce from the salad bad. Drizzle Balsamic Vinegar on top of lettuce. Top with Asparagus and Sautéed Onions. Go back and get grilled sausage, slice and place on top of salad.

Vegan ‘Chicken’ Quesadilla

Ingredients:

• 1ea 12”

• 1 Boca ‘Chicken’ Patty

• 1oz. Diced Red Onion

• 2oz. Diced Tomato

• 2oz. Green Peppers

• 4oz. Vegan shredded Cheddar Cheese

• 2oz. Soy based Flavored oil (whirl)

Method: Go to Deli station and request a 12” flour tortilla. After you receive it leave it open on your plate. Go to the Vegan refrigerator and gather your cheese and Boca patty. Sprinkle cheese all over tortilla. Then add the remaining ingredients. Take plate over to the Grille attendant and request they chop up your patty and add to quesadilla then grill.

Ingredients:

• 1ea 12” Flour Tortilla

• 4oz. Scrambled Eggs

• 2ea Tofurky Breakfast Links

• 2oz Shredded Cheddar Cheese

• 1oz. Red Onion

• 1oz. Green Peppers

• 1oz. Diced Tomato

Method: Go to the Deli and request a 12” flour tortilla. Then go over to the Vegan refrigerator and gather 2 Tofurky breakfast links. Take tortilla and breakfast links over to the omelet station. Request that they chop up your tofurky links and sauté them with the while they scramble your eggs. Give the attendant your flour tortilla and kindly as of they can roll you up a burrito.

Peanut Butter, Strawberry, and Banana Quesadilla

Ingredients:

• 2oz Peanut Butter

• 2oz. Strawberries

• 1/2 Banana (sliced)

• 1 12” Flour Tortilla

Method: Gather a 12” flour tortilla from the Deli station. Spread peanut butter all over one side. Slice 1/2 banana and gather strawberries and place on the peanut butter side of the tortilla shell. Fold it over. Take to the Grille Station and request they make you your quesadilla. After cooked and HOT, cut in ¼ and enjoy. Thai Chili Vegetable Stir Fry with White

Ingredients:

• 1oz Zucchini (raw)

• 1oz Yellow Squash (raw)

• 1oz Red Bell Pepper (raw)

• 1oz. Celery (raw)

• 1oz Carrot (shredded)

• 1oz. Baby Corn

• 1oz. Broccoli florets

• 2oz. Mushrooms (sliced)

• 1oz. Sesame Oil

• 1oz

• 4oz Sweet Thai Chili Sauce

• 1oz Chow Mein Noodles

• 4oz Cooked White Rice

Method: Gather first 8 ingredients from the salad bar in a bowl. Take bowl over to Bowlful Station request that they sauté the vegetables in sesame oil for you. While veggies are cooking gather soy sauce, sweet thai chili sauce and chow mein noodles, also a bowl of white rice. Give the Soy and Chili Sauces to the station attendant and have them incorporate them into the stir fry. Top rice with Stir fried vegetable and chow mein noodles.

Faux BBQ Chicken Panini (Deli)

Ingredients:

• 3oz Faux Chicken Salad

• 1oz Roast Peppers

• 1oz Sliced Onion

• .5oz BBQ sauce

• 2 slices Choice of Bread

Method: Assemble all ingredients from deli on bread, return bread to attendant to be placed on Panini Grill.

Chickpea Curry with Rice

Ingredients:

• .5oz Canola Oil

• 3oz Chickpeas

• 1oz Diced Onion

• 1oz Fresh Spinach

• .5oz Shredded Carrot

• 1.5oz Plain Yogurt

• Pinch of Curry powder

• Pinch of Coriander or Cilantro

• Salt & Pepper to taste

• 4oz Rice

Method: Sauté onions, garlic, chickpeas, spinach & carrots in oil until onions are translucent about 2 minutes. Add yogurt & and sauté until hot. Served over rice.

Method: In a bowl- soften cream cheese in microwave on high for 15 seconds, add all other ingredients and stir, Microwave on high for 20 seconds. Dip the chips! PB & Chocolate Banana Waffle

Ingredients:

• 1 Waffle

• 2.5oz peanut butter

• .5oz chopped peanuts

• .5oz chocolate chips

• 1 banana, sliced

• 2oz chocolate syrup

• 2oz whipped cream

Method: Make waffle on waffle maker, spread on peanut butter, layer with banana, sprinkle with chopped peanuts & chocolate chips, microwave for 20 seconds on high, squirt on chocolate syrup. Dip in whipped cream!

Roast Vegetable Frittata

Ingredients:

• 4oz scrambled egg

• 1oz whole or

• 2.5oz roasted vegetables

• .5oz fresh spinach

• Salt & Pepper to taste

• 1oz cheddar or pepper jack cheese

Method: Get roasted vegetable medley from deli put in soup bowl, add scrambled eggs from omelet station & milk, stir, on high microwave 1 minute, add cheese and green onions microwave one more minute, when firm, salt and pepper to taste.

Ingredients:

• 1 whole potato (ask any associate)

• 1oz chopped fresh spinach

• 1oz sliced mushroom

• .25oz sliced onions

• .5oz garlic

• 2oz shredded mozzarella cheese

• Salt & Pepper

Method: Use a fork and stab top of potatoes a few time then place in microwave on high for approximately 6 minutes until soft when squeezed (Time varies based on size of potato). While potato is cooking, take mushrooms, spinach and onions to grill to be sautéed and put on top of potato, Sprinkle with shredded and grated cheese. Return to microwave for 40 seconds and salt and pepper to taste.

Bean, Rice, Cheese Burrito

Ingredients:

• 1 soft tortilla • 2oz diced tomato

• 1oz diced pepper • .5oz chopped green onion

• 2oz kidney or black beans • 2.5oz rice

• .25tsp chili powder • .25tsp cumin

• Pinch of coriander/cilantro • Pinch of garlic

• 2oz shredded cheddar • 2oz sour cream

Method: Combine tomato, peppers, green onions, beans, chili powder, cumin, coriander, garlic and take to grill for sauté (or microwave for 1.5 minutes), add rice from rice station and stir. Place mix in center of tortilla and add cheese, fold sides toward the center and roll placing the seam on the bottom. Microwave for 30 seconds or back to the grill to be grilled golden brown on both sides. Dip in sour cream and enjoy. Meatless Gyro

Ingredients:

• 1 pita bread • 3oz hummus

• 1oz shredded lettuce • 1.5oz diced tomatoes

• .5oz thin sliced onion • .5oz sliced black olives

• 1.5oz feta cheese • 4 chopped mint leaves

• 1oz chopped cucumber • 20z plain yogurt

• .5oz pesto mayo • Salt & Pepper to taste

Method: Take pita to grill to be warmed and cut in half, open pocket in pita, spread hummus inside pocket, combine all other ingredients and fill pocket.

Five Soy Chicken Stir Fry

Ingredients:

• 2.5oz soy chicken

• 4oz assorted vegetables

• .25tsp chopped garlic

• .25tsp chopped ginger

• .25tsp sesame oil

• 1tsp soy sauce

• 1tsp oyster sauce

• .25tsp five spice

• 3oz rice

• Sriracha to taste

Method: In a bowl combine soy chicken (from the deli) with a selection of your favorite veggies from the salad bar, including but not limited to (broccoli, onions, peppers, mushrooms, spinach, edamame, carrots, squash, etc…) add all other ingredients except rice. Take to grill for grilling. Place hot vegetable mix over rice add Sriracha for an added Bam! can be used in place of chicken.

Ingredients:

• 4oz tofu

• 1oz scrambled egg

• 3pkgs or 6 saltine crackers

• 1oz chopped scallions

• 1tsp worcestershire sauce

• 1tsp yellow mustard

• 1tbs mayo

• 1 wedge lemon juice

• Old Bay to taste

Method: Mash tofu with a fork until crumbled, crush crackers and add to tofu, combine. Add all other ingredients and mix until well distributed for 2 patties/cakes, take to the grill to be sautéed till golden brown.

Mediterranean Veggie Pizza Bagel

Ingredients:

• 1 Bagel sliced in half

• 2oz hummus

• 2oz diced tomato

• 1oz baby spinach chopped

• 1oz black olives sliced

• 2oz roasted vegetable mix

• 1 pepperoncini diced

• 1oz feta cheese

• 1oz shred mozzarella cheese

Method: Split bagel, on each side spread hummus and tomato, take remaining ingredients except mozzarella cheese to grill to be heated. Once heated spread veggie mix on bagels, top with mozzarella cheese and microwave for 15 seconds until cheese melts. Tandoori Tofu

Ingredients:

• 3 sliced tofu 1.5oz • 3oz canola oil

• 1oz lime or lemon juice • 4oz plain yogurt

• 1oz lime or lemon juice • 1oz shredded carrot

• 2tsp green peas • 2oz chopped scallions

• 2tsp tandoori spice • Garnish coriander/ cilantro

• 1oz diced tomato • Salt & Pepper to taste

Method: Slice tofu in 3 equal pieces to thickness of your pinky, combine all other ingredients together expect peas, tomato, and cilantro. Marinate tofu in half of the mix for 5 minutes, add peas to the other half of mix to use as sauce, take tofu to the grill for grilling, once tofu begins to brown remove and top with remaining sauce mix, garnish with tomato and cilantro. Served with rice.

Chili Bean Mac & Cheese

Ingredients:

• 1oz canola oil • 3oz black or kidney bean

• 1oz chopped green peppers • 1oz chopped scallions

• 2oz diced tomato • .25oz chopped jalapeno

• .5tsp chili powder • .5tsp cumin

• 3oz garlic powder • .25tsp macaroni and cheese

• 1oz shredded cheddar • 1oz sour cream

Method: Combine oil with beans, peppers, scallions, tomato, jalapeno chili powder, cumin, garlic & bring to grill to be heated. Once heated add mac and cheese, top with cheddar and sour cream.

• 2oz garbanzo beans • 1oz shredded carrot

• 2oz marinara sauce • .25tsp Italian spice

• 3oz green pepper large slice

Method: Combine rice, egg, onions, tomato, beans, carrot, marinara, garlic, and in a bowl. Microwave for 90 seconds. Take peppers to grill to be cooked. Top rice mixture with cheddar cheese and smother with grilled peppers.

Meatless Mushroom Cheese Steak

Ingredients:

• 3oz sliced mushrooms

• 1oz sliced onions

• 1oz sliced peppers

• 2 slices provolone cheese

• .5oz shredded lettuce

• 3 slices tomato

• 1oz mayonnaise

• Salt & Pepper to taste

• Sub roll

Method: Gather mushrooms, peppers, onions from salad bar and take them to grill to be sautéed, and have cheese added. Spread mayonnaise on roll and grill roll. Place mix on roll, add lettuce and tomato. Vegetarian Chef Salad Wrap

• 1 tortilla • 2oz sliced hardboiled egg

• 1 slice Swiss cheese • 1 slice provolone cheese

• .25oz small diced peppers • .25oz sliced black olives

• Pinch of meatless bacon bits • 1oz ranch dressing

Method: Lay tortilla flat, add cheese, sprinkle in half the lettuce, layer tomatoes, take all the other ingredients and mix in a bowl. Add to tortilla, fold sides and wrap.

Grilled Pepper and Potato Reuben

Ingredients:

• 2oz pepper sliced

• 2oz French fries

• 1oz sauerkraut

• 2 slices Swiss cheese

• 1tsp meatless bacon bits

• 1oz thousand island dressing

• 2 slices rye bread

Method: Gather ingredients and take to grill. Grill peppers, spread dressing on each side of bread, add Swiss and grill when peppers are done blend with add French fries. Method: If using diced apple put in bowl and microwave for 30 seconds. In a separate bowl mix all other ingredients together except chocolate chips and microwave for 30 seconds. Ingredients:

• 1 pita pocket, cut into triangles • 2oz cream cheese

• 2oz hummus • 1tbs green onion

• 1tbs shredded carrot • 1tbs diced tomato

• .25tsp chopped garlic • 1tsp pesto

• Salt & Pepper to taste

Method: Take pita to grill to be grilled. In a bowl add cream cheese, microwave for 15 seconds to soften. Mix in all other ingredients well and microwave for 45 seconds stirring once at 15 seconds and then again at the end. Dip the chips!

Sweet Chili Tofu Stir Fry

Ingredients:

• 2oz tofu cubed • 1oz sliced onions

• 1os sliced peppers • .5oz shredded carrot

• 3 broccoli florets • 1oz sliced zucchini

• .5oz sliced mushrooms • .5oz edamame

• 1 sliced garlic clove • .5oz sesame oil

• 2oz sweet chili sauce • 3oz rice

Method: Combine all ingredients except tofu, chili sauce and rice. Take to grill to be sautéed for 3 minutes, add sauce cook one more minute add tofu and gently toss and serve over rice.

Ingredients:

• 3oz nacho chips • 2oz shredded cheddar

• 3oz diced tomato • 2oz diced peppers

• .5oz chopped green onion • 1oz diced cucumber

• 1 diced jalapeno pepper • 1tbs olive oil

• 1tbs lemon or lime juice • .5tbs garlic

• 1 pinch cumin and/or salt & pepper • 1tbs pesto

• 1tbs sour cream

Method: Cut and combine all ingredients except chips and cheese. Put in a bowl and mash with a fork let, sit 5 minutes. Place chips on a plate sprinkle on cheese to cover chips and microwave for 20 to 30 seconds or until cheese melts. Pour gazpacho mix over chips and top with sour cream mixed with pesto.

3 Cheese grill with Tomato & Facon

Ingredients:

• 2 slices multi bread • 1 slice Swiss cheese

• 1 slice American cheese • 1 slice Pepperjack Cheese

• 4 slices sliced tomato • 1tsp meatless bacon bits

• .25tsp black pepper • .5oz mayonnaise

Method: Gather ingredients, crush bacon bits in a bowl with a spoon, spread mayonnaise on one side of each slice of bread and put on grill mayo side down. Ingredients:

• 3 oz corn salsa • 2 oz Grilled Peppers

• ½ oz Jalapeno • 1 oz grilled onions

Method: Assemble Cheese, corn salsa, peppers, onions, and cheese on one side of a tortilla then fold into a ½ moon. Then grill on both sides. It is important to put cheese on both sides of the tortilla so the cheese melts everything together. Cut in 4 pieces and serve with your favorite hot sauce or salsa.
