INGREDIENTS: 1 tsp dried thyme 1 tsp salt StEAMED FISH WItH tHYME AnD ½ tsp pepper toMAto VInAIgREttE 1 (7 lb.) pork rib crown roast (about 8 ribs) INGREDIENTS: 2 large celery stalks 1 Tbsp Dijon mustard 1 large onion 1/3 cup oil ½ cup butter 2 Tbsp finely chopped scallions 1 12-ounce pkg. fresh cranberries (about 3 cups) 2 Tbsp freshly chopped cilantro (or parsley) ½ cup sugar Pinch red hot pepper flakes (optional) 1 16-ounce pkg. cornbread stuffing 2 Tbsp rice vinegar 3 Tbsp flour 1 Tbsp Marques de Irun Verdejo Fresh thyme for garnish 1/2 cup diced and peeled tomatoes 2 Tbsp grated ginger PREPARATION: 1 Tbsp light soy sauce Rub inside and outside of pork rib crown Salt and pepper to taste roast with thyme, salt, and pepper.
