REGION: / / Chablis GRAPES: 100% Petit Chablis is located in the northern part of Burgundy, halfway between Dijon and Paris. The continental climate brings very cold temperatures in winter followed by spring frosts and hot summers. These conditions and the marly limestone soils combine to mold the unique character of Chablis wines. The grapes are handpicked and sorted, then gently pressed and fermented without artificial temperature control. This Petit Chablis is aged in stainless steel tanks to keep the unique expression and minerality. Fining and filtration is light. The goal is always to retain the ’s complexity and structure.

HARVEST NOTE The end of the growing cycle took place during the very hot, dry conditions that prevailed during the month of August. July had seen a few thundery rainstorms here and there, but these were very localized events. Overall, levels of summer rainfall was notably low in Beaujolais, the Maconnais and Chablis. Ripening, therefore, advanced slowly – by the end of August, the berries were still fairly firm, with thick skins. Some of the younger plants and those vines with inadequate hydric reserves suffered from a lack of water, but the main coped well with the dry conditions as these conditions had prevailed for several weeks already and the vines had learned to adapt to them. During the visits to the vineyards at the end of August, the grapes were in more or less perfect health, and that a generous was promised.

TASTING NOTE The Petit Chablis shows a nice straw yellow color. A straightforward wine with a very accessible minerality.

FOOD PAIRING Petit Chablis may be served chilled and goes perfectly with oysters, shellfish, fish tartare as well as charcuterie, fresh cuisine, salads, goat cheese.
