As the name ‘Sauvage’ –savage suggests it is a wild beast yet extremely delicate and fascinating. Stunning wine! Castillo Ygay Gran Reserva, Marques de Murrieta, Rioja Spain 2005 125.00 One of the oldest wine estates in Rioja. Compelling combination of red and black fruit, exotic spice and vanilla. Gevrey Chambertin 1er cru les Cazetiers, Domaine Faiveley, Burgundy 2011 £95.00 Full bodied and rich style of Pinot Noir. Nowhere else does this variety result in wine more powerful than in this village. Barolo Conterno Fantino, Piedmont Italy 2011 120.00 Made of one of the noblest of grape varieties: Nebbiolo. Big and full-bodied, modern style of Barolo with rich aromas and flavours. Lapostolle Clos Apalta, Colchagua Valley Chile 2011 155.00 Blend of cabernet sauvignon, carmenere and merlot to soften it up. Really big wine, full bodied but a great fruit driven red wine.

    HAVE SOME MADERA, M’DEAR Story and photos by John Blanchette Quiet lanes flow through the Madera Wine Trail It was the July 4th weekend and I was headed into the Central Valley to visit Madera County and one of California’s oldest wine growing areas. The San Joaquin Valley can be blistering hot this time of year and I certainly wasn’t disappointed. Temperatures soared to 105 degrees. As my car drove on Route 99, slicing through this wide, flat and fertile plane that stretches over 200 miles between Bakersfield and Stockton, crops and livestock passed my window like an expanded grocery market. A B O U T T H E V I N E Y A R D The estate is in the village of Bommes in the heart of the Sauternes appellation. Château La Tour Blanche sits at the top of a ridge of gravel over clay and limestone subsoil. This advantageous position provides the best possible exposure to the sun, optimal drainage, and a high concentration of flavors and natural sweetness. W I N E P R O D U C T I O N Emotions de La Tour Blanche consists mainly of Sémillon, with smaller percentages of Sauvignon Blanc and Muscadelle which are harvested late and selected for botrytis. However, the higher scores are mostly obtained by international commercial wines, resulting in lower scores being awarded to the classic European wines. We hypothesize that this is due to the tasting methodology that fails to recognize this wine style. Therefore, the purpose of this work was to show the implementation of a new wine tasting approach to overcome this drawback. The proposed training technique is based on the emotional responses of the taster after smelling two wines of clearly opposite styles. The first wine is characterized by high aromatic intensity but low in-mouth intensity, perceived as disappointing to the taster, here defined as an “easy” wine. The second wine is characterized as a wine with low aromatic intensity but that provides an unexpectedly positive in-mouth experience, here defined as a “difficult” wine. These emotions are explained by the wine sensorial characteristics. The “easy” wine has an intense, simple smell with short persistence while the “difficult” wine has a low intensity, complex aroma, and long persistence.
