How to bake for Salads, , and Snacks

Ingredients:

1 or more containers of extra firm tofu Marinade: (optional): 1 tbsp. 1 tbsp. low sodium soy 1 tbsp. rice 1 tbsp. water Other marinade ideas: minced ginger, minced , lemon or lime juice, , barbeque sauce, and/ or Worcestershire sauce.

Instructions:

1. Pre-Heat the oven to 350 degrees. Line a baking sheet with parchment paper. 2. Press the tofu from its packaging and pat dry with paper towels. Line a plate with a paper towel and set the tofu on top. Set a small plate on top of the tofu and weight it down with something heavy. Press for 15-30 minutes. You will see liquid collect around the tofu. 3. Cut the tofu into desired size pieces 3. Marinate the tofu, optional 4. Bake the tofu: Arrange the tofu on the baking sheet over a single layer. The tofu can be close, but try to avoid pieces touching each other. The tofu will shrink as it bakes. Bake until the outside of the tofu is golden and pieces look slightly puffed, 20-45 minutes depending on the size and shape of tofu. Toss the tofu every ten minutes. The longer you bake the tofu, the chewier it will be. 5. Cool and store: If serving immediately, serve while still warm. If saving the tofu for later, let it cool on the baking sheet, and then transfer to a refrigerator container. The tofu will keep refrigerated up for a week.
