Rinse aburage in hot water. Squeeze out excess water and cut into strips. Rinse cod fish in warm water. Drain. Combine all ingredients in a bowl and toss. Mix well. Refrigerate - better overnight. 1 container surimi 1 pkg. hamburger 3 pkgs. aburage (sliced in half) (optional: grated carrots, chopped onions and water chestnuts) Mix all the above ingredients together, except aburage. Slice aburage in half. Stuff aburage with surimi mixture. Roll chicken in flour(If flour gets moist on chicken, be sure to sprinkle more flour or chicken will not get crisp) Deep fry chicken until very crisp. Dip in sauce and serve. 3 cucumbers 1 sweet onion, sliced thin Hawaiian salt, (rock salt) 1 tray shredded imitation crab 1 jar 6.7 oz Kim Chee Base (red sauce ingredients:garlic,salt, chili pepper, and ginger) Peel cucumber (like for salad). Slice slant about 1/4 inch thick slices. Mix cucumber slices and onion and sprinkle a little Hawaiian salt. Soak for about half hour. Drain well. Add shredded imitation crab to cucumber and onion. Sprinkle Shio Fuke Konbu on top. Mix well. Let stand about 15 minutes before serving. NOTE: the salt and shoyu flavor from the Konbu (seaweed) gives the cucumber a very nice taste. 1 pkg. lumpia shells 3/4 lb. ground pork optional: instead of ground pork, you can use shrimp,hamburger or fish 1 pkg. chop sui vegetables 1/2 pkg. bean sprouts 1/4 cup oil salt & pepper to taste Brown ground pork in frying pan. Add mixed vegetables and bean sprouts. Add salt and pepper to taste. Drain. Wrap pork and vegetable mixture in lumpia shell by laying about 2 Tbsp of the pork-vegetable mixture on the shell and rolling the shell up. Fold two ends well. Heat oil in frying pan and fry lumpia rolls over medium heat until brown on both sides. serve with lumpia sauce. Lumpia Sauce: 2 green onions, chopped 2 Tbsp toasted sesame seeds, ground 1/4 cup shoyu Dash of salt and pepper 1/4 cup vinegar Chili pepper flakes,2 Tbsp sugar Mix onions,shoyu,vinegar,sugar,sesame seeds,salt and pepper.Add chili flakes to taste May use: head cabbage, won bok, or mustard cabbage.

    Courtesy of www.alighaemi.com THE SUSHI GUIDE – A LIST OF TYPES OF SUSHI 寿司 At over 200 terms I have attempted to compile as comprehensive a list of sushi fish and a guide to sushi terms and sushi terminology as possible. Sushi and its related fish can become confusing and many diners and restaurants, and lesser chefs, casually mistake and confuse the terms and the fish. The guide goes beyond sushi staples like shrimp, salmon and tuna. Many of the items may not be available locally or only have Japanese te rms. Where possible I have tried to indicate seasonality and availability to the alphabetical list of sushi terms and added my own subjective experience tasting the item. Incidentally, in Japan sushi has its own unit of measurement called Kan カン, which acted as a unit of measurement in the Edo Period equal to 3.75 Kg for fish or the equivalent to either 1 or 2 nigirizushi. Some believe it is 1 sushi, while others believe it is for 2 given how they typically come in a set comprised of pairs. Where possible purchase or order male fish. Female fish give part of their nutrients, and associated taste, to their eggs or roe. Additionally, it has been said that if one can pick a specific cut or part of a fish the rear side nearer to the tail is likely better. It has been moving more and is hence less rough. I recommend treating sushi with respect and focusing on quality as opposed to surrendering to the temptation of low-grade or cheap fish at the hands of uninformed restaurant owners and their chefs.

Cook for 30 – 45 minutes or until you achieve a saucy consistency. 3. For the Southern Slaw: Combine the cabbages, carrots, and onions in a bowl. Season with salt and pepper and let sit for 5 minutes. 4. In a separate bowl, combine the vinegar, oil, sugar, celery seeds and black pepper. Add to the cabbage mixture and toss to combine. An 84 day storage study compared kamaboko gel quality made from solubilized and traditional surimi. Fresh farmed chinook salmon (Oncorhynchus tshawytscha) was used to make both solubilized surimi and surimi (control). Solubilized treatments contained varying concentrations of calcium chloride, sodium chloride and water. The Random Centroid Optimization (RCO) program randomly generated concentration values of additives. All surimi treatments (solubilized and control) contained 8.3% cryoprotectants.

    MMeeaatt SSuubbssttiittuutteess Tofu, made from soybeans, is a hearty and very flexible food. Think of it as a blank slate, an excellent substitute for fish, chicken, cheese, cream, eggs, and mayonnaise. Tofu packed in water should be drained before using. Tofu can be either soft or hard. Soft tofu blends into a smooth cream and is excellent in desserts. Hard, or firm, tofu retains its shape, and can be sliced or crumbled. Firm or extra-firm tofu can be drained and then pressed firmly using cheese cloth to remove excess water. Crumble, slice, or dice it, and add it to the skillet to add more protein to your favorite vegetables and seasonings. Marinate tofu the way you would chicken or fish—with herbs, citrus juice, cracked black pepper, vinegar, tamari, soy sauce, or wine. Cook marinated tofu in a sprayed skillet, under the broiler, or on a sprayed grill until it is nicely browned on both sides. Try freezing a drained block of tofu. After it thaws, frozen tofu soaks up marinades easily since it becomes more porous in the freezing process. It also changes slightly in consistency, becoming chewier. Seitan is a wonderful substitute for chicken or beef, and comes in both flavors. Derived from wheat in a process that extracts the gluten or wheat protein, it slices and dices easily without falling apart, and is delicious plain. Tempeh is a form of fermented, unprocessed tofu; it is remarkably nutritious. It usually comes in hard bricks that can be sliced or chopped, then added to stir- fries or chilies.
