To make the : Preheat oven to 375 degrees F. Line a sheet with parchment paper. In a medium saucepan, combine water, , sugar, and salt. Bring to a boil. Remove from heat.

Bring the mixture to a boil, · 3/4 cup heavy cream, whipped whisking constantly. Boil for 1 minute; remove from heat. Stir in rum, orange zest, and vanilla. Confectioners' sugar for dusting and Maraschino cherries Transfer the pastry cream to a bowl. Place a piece of plastic wrap directly on the surface. Allow to cool for 30 minutes and then refrigerate until cold. Fold in the whipped cream. To assemble the Zeppole: Cut the in half horizontally. Transfer the filling mixture to a pastry bag with a star tip. Pipe some of the filling onto the cut side of the bottom half of each pastry. Place the top half of the pastry on the filling. Vice President Joe Baglione had pacemaker surgery on February 20th. We wish him a speedy recovery. Peggy Constantino passed away at the age of 94 on January 31st. She was the mother of Cathy and mothe-in-law of Joe DeMaria. Please keep her and her family in your prayers. Pasta for St. Joseph’s Day Since St. Joseph’s Day always falls during the season of Lent, a period of penance and fasting, no meat is served. Instead, fish and are staples of the feast. One traditional Sicilian dish is or Pasta with Sardines and another is with Anchovies and Breadcrumbs. Since St. Joseph was a carpenter, the breadcrumbs, which are an in- gredient in both dishes, are meant to symbolize sawdust. Both of these dishes are also commonly served as part of the Eve of the Seven Fishes dinner on Christmas Eve. The pasta used in Pasta with Sardines is typically a long hollow pasta such as bucatini or perciatelli. In , wild fennel is used and also fresh sardines. Since it is usually difficult to find fresh sardines in the US, this recipe substitutes canned sardines.

Our January crab feed was great; everyone got their fill of crab. The dance floor was packed most of the night and the music seemed to be to everyone’s liking. We’re looking forward to an even bigger turn out for the February crab feed. So come prepared for a fun night and don’t forget your bib.
