HILLERSDEN Marlborough, Sauvignon Blanc 2018 FROM THE WORLD’S EDGE Hillersden Estate wines are made from our family estate on the edge of the Marlborough growing region. In the Upper Wairau Valley our crops mature at a slightly slower pace, providing the foundation for wines of good weight, minerality and complexity come . This means food-friendly wines with beautiful aromatics and brilliant texture.

ThisTasting Marlborough Notes Sauvignon Blanc shows the poise and purity of a true classic. Notes of ruby grapefruit and passionfruit are lifted by aromas of freshly cut herbs which epitomise quality New Zealand Sauvignon Blanc. The palate is racy and refined with a freshness of flavour that can only come from pristine Marlborough we cultivate on the banks of the mighty Wairau River.

HillersdenVineyard soils Notes are a mix of alluvial and glacial gravels interspersed with clay and sandy loams. Yields were low at 10 tonnes per hectare. An open canopy allowing sunlight penetration and heat shapes the flavour of our fruit. Pyrazine compounds responsible for the astringent bell pepper fla- vors are broken down by the extra UV light, and the added heat brings out yellow fruits and tropical flavors.

6% of the harvest was Notes pressed into older French barrels. The remain- der of our grapes were pressed to stainless steel tanks where the juice spent three weeks fermenting at cool temperatures. Post ferment we allowed the wines to rest on yeast lees for a prolonged period to take advantage of the natural benefits of autolysis – mouthfeel and natural antioxidant protec- tion. We thought we would encourage that aspect of it with some sparkle. Introduc- ing a sparkling to the world that celebrates the spirit of the Marlbor- ough region.

This crisp, vibrant wine elevates classic Marlborough Sauvignon to celebratory levels. A perfect partner to the freshest of seafood. Equally de- licious on its own, and imperative where there is cause to raise one’s glass.

TheVineyard stoniest rows Notes of the vineyard are selected to enhance early tropical fruit expression and underlying mineral notes. Large fist and head sized stones undervine have a large part to play lengthening ripening hours into the twilight hours. We employed sheep to leaf thin and get some extra sun- light into this wine. The fruit was picked early to capture the lively acidity necessary for a vibrant .

WeWinemaking pressed it lightly andNotes used only the free run juice. Primary fermenta- tion was carried out in stainless steel tank under a very cool temperature to preserve those delicate fruity esters. After just a brief period on the yeast lees the base wine was transferred into an autoclave for secondary fer- mentation. The fresh acid and bright fruit combine with frisky bubbles to create a spirited wine enjoyable on so many levels.

Pinot is the ultimate wine nerd’s wine and lucky for us it is New Zealand’s fa- vorite red . Good Pinot Noir all about finding balance. We love Pinot that has fruit and oak weight, mouth-watering acid and an elegant finish.

SeductiveTasting bright Notes fruit. A complex and elegant Marlborough Pinot Noir, with vibrant berry and cherry fruit, bright acid, balanced with hints of florals, baking spice, earth and mocha. Matured in French Oak.

TheVineyard 2016 Pinot NoirNotes is a blend of Dijon clones with a small portion of 10/5 fruit. Grown on a section of the Wairau valley known for stony gravels and heavier clays. The heavier soils and warmer March /April weather led to higher fruit concentration and depth. There were two rain events but good weather following meant disease pressure was minimized. Optimal ripe- ness was reached at moderate sugar levels and the fruit was bright, deeply coloured with moderate tannin.

TheWinemaking 2016 Pinot Noir wasNotes handpicked and destemmed into 1 tonne fermen- ters. After a brief cold-soak period the majority was allowed to wild fer- ment - a small portion was inoculated with isolate yeast. After the wine was allowed to mature for 10 months in French oak bar- rels – 25% new. This is a Pinot Noir which is approachable now and will benefit from age. Deeply coloured with dark fruits, spice and structure that walks the line between elegance and power.

Hillersden has created the Reserve tier of wines for or varietal projects outside of the norm. Premium wines for the the true wine lover.

OurTasting Hillersden Notes Fumé Blanc exhibits alluring notes of ripe nectarine, lemon zest and citrus blossom, all underlined by complex toasted cashew aromas from the barrel fermentation. The palate is vibrant in its’ youth, with juicy natural acidity, flavours of lemongrass and ruby grapefruit and just a hint of caramel on the finish. These flavours will mellow over time and provide a wonderfully complex drinking experience for years to come.

100%Winemaking of this wine wasNotes pressed into a mixture of new and old French oak barriques and allowed to undergo fermentation without any intervention, utilising the indigenous yeast that grow in our vineyard ecosystem. Post fermentation, the wine was aged sur lie for 6 months to build structure and complexity. The wine is immensely enjoyable now, and will continue to evolve and provide great drinking pleasure for up to 10 years.
