Sauvignon Blanc Napa Valley 2016 SAUVIGNON BLANC NAPA vaLLEY TASTING NOTES INFO The 2016 Adobe Road Sauvignon Blanc, VARIETAL COMPOSITION Napa Valley was sourced from two dis- tinct growing regions in Napa. Yount- 100% Sauvignon Blanc ville produces a Sauv Blanc with rich APPELLATION tropical notes, juicy texture, and hon- Napa Valley and Coombsville eysuckle aromatics. Down south in the Coombsville AVA of Napa the weather VINEYARD(S) is relatively cooler, producing a wine Vineyards in Yountville and Coombsville driven by citrus tones and aromas, with a bright core of refreshing acidity. This BARREL COMPOSITION bottling is a blend of both wines and 60% stainless steel ferment; 40% neu- completes a picture of our ideal Napa tral barrel ferment Sauvignon Blanc: tropical, citrus aromas BARREL AGING lead to a rich mouthfeel featuring ripe melons and pineapple. Bright acidity 10 months from harvest to bottle caries it through to a lingering finish that ALCOHOL makes you grab another sip. 14.3% WINEMAKER WINEMAKER’S NOTES Garrett Martin Sourcing two lots of Sauvignon Blanc CASES from different Napa climates was key in 180 creating a blend that had all the balance and expression we look for in the grape. The combination of stainless steel and neutral oak barrels is further complexed by inoculating separate containers with different yeasts, teasing out more flavors and aromas as each yeast creates its own unique version of the wine. Each barrel was carefully tested and folded into the final blend creating a depth of character that is incredibly appealing. This Sauvignon Blanc really showcases the dance between cool and warm Napa cli- mates for sauvignon Blanc. Ripe melon and tropical fruits from Yountville are supported and lifted by the fresh, juicy acidity and citrusy elements of its cool-climate counterpart in southern coombsville. The beauty is in the blend and the balance. THE VINTAGE 2016 proved to be a plentiful and fairly moderate growing year for Sauvignon Blanc in Napa Valley. This was especially relieving coming on the heels of a short 2015 vintage. In southern Napa, average temperatures were a bit lower than more northern Yount- ville, but that made for perfect winemaking conditions. Adobe Road Winery | 1995 S. THE VINTAGE The 2014 vintage was known for having the earliest start on record, coming on the heels of the third consecutive drought year in Sonoma County. However, there was just enough rain- fall to charge the soil with water, making the growing conditions ideal in the dry winter and warm spring, which yielded a larger than aver- age crop. WINEMAKER’S NOTES ALCOHOL The grapes were hand picked whole 14% cluster at 4 a.m.and promptly delivered to the winery and then whole cluster WINEMAKER pressed to release the juice. Primary fer- Garrett Martin mentation took place in neutral French oak barrels. During aging, 20 percent CASES new oak was swapped into the mix, 204 adding richness and complexity. The ACCOLADES wine was aged on light lees and stirred periodically for increased volume and a 92+ points, Robert Parker brioche-nutty quality. The South Sonoma Chardonnay is always a joy to make. Coming from a scrappy-looking organic vineyard in the south of Sonoma proper, the surprise is in the nuance and rich- ness of detail in this wine. Preserving and showcasing that detail is the challenge and reward of the vineyard and this bottling. THE VINTAGE 2015 was a challenging vintage in both Sonoma and Napa; cool weather and less than ideal flowering conditions led to fruit set that left most vineyards lacking about 20-30% of normal production volumes. In the most affected vineyards this diminished fruit set was complicated by the fact that it was also drawn out, meaning that fruit achieved ripe- ness at different times within the same block. For the 2015 South Sonoma block, this became an advantage as we were able to pick at optimal ripeness while maintaining fresh acidity. Adobe Road Winery | 1995 S. The vibrancy of fruit and ability of the three clones to compliment each other so well is a testament to the Sangiacomo’s plan- ning and farming. As is always the case with pinot, the goal is to guide the fruit into wine while retaining the expression of its place and time. THE VINTAGE 2016 was a fairly ideal growing season in the Petaluma Gap of Sonoma County, allowing the fog, wind and sunshine to produce opti- mally ripe fruit in a picking window that was precise but not too compact.     SOLAR 6 GRENACHE ROSÉ IGP Cévennes Act for planet Winemaker’s note Solar 6 is a wine from organic farming certified "AB" and "Bee Friendly", a label that aims to protect bees and pollinators. In an alarming context of the increasing disappearance of pollinators, beekeepers have initiated the creation of the European "Bee Friendly" label in order to identify agricultural practices that respect the preservation of bees. The name of this range of round and fruity wines, Solar 6, pays homage to the solar terroirs of the South of France where these wines are made. It also evokes the first flight of recognition of bees, the "fireworks sun", and the symbolic number of these pollinators, 6. Winegrower’s note The plots of Solar 6 benefit from a beautiful sunshine and a terroir made of rolled pebbles which gives the grapes a wide aromatic palette. After sorting the harvest and pressing under gas, the grapes are lightly macerated during the pre-fermentation phase before being placed on fine lees in the post-fermentation phase and put into thermo-regulated vats. Tasting notes Grape varieties Endowed with a clear robe with garnet reflections, Grenache this grenache rosé has a charming nose with aromas of red fruits, blackcurrant, strawberry, basket of fruit, with a beautiful freshness. This is followed by a Cévennes supple attack on the palate, with an ample, round and suave mouth. Fresh and fruity, this cuvée of Grenache rosé offers intense floral notes and mouth- watering aromas of red fruits.     Structure in Wine steiia thiAst What is Structure? • So what is this thing, structure? It*s the sense you have that the wine has a well-established form,I think ofit as the architecture ofthe wine. A wine with a great structure will often remind me ofthe outlines of a cathedral, or the veins in a leaf...it supports, and balances the fiuit characteristics ofthe wine. The French often describe structure as the skeleton ofthe wine, as opposed to its flavor which they describe as the flesh. • Where does structure come firom? In white wines, it usually comes from alcohol or acidity; in red wines, it comes from a combination of acidity and tannin, a component in the grapes' skins and seeds. Thus, wines with a lot of tannin (like cabernet) also have a lot of structure. Beaujolais is made from gamay which does not have much tannin. As a result, Beaujolais can lack structure; it feels soft, flat or simple in the mouth (though its flavors can certainly still be attractive). • While structure is hard to articulate, you can easily taste or sense it —^and the lack of it. • Understanding structure is critical to understanding any ofthe ''powerful" red varieties: cabernet sauvignon, merlot, syrah, nebbiolo, tempranillo, and malbec, to name a few. I just don't think you can understand these wines unless you understand structure, and how it frames and focuses the powerful rush of fruit. It adds freshness, and a "lightness" to the density ofripe fiuit. Structure matters when pairing wine and food. Foods with a lot of structure themselves— like a meaty, thick steak-need wines with commensurate structure (like cabernet), or the food experience can dwarfthe wine experience.

Most likely, it's a refreshing sipper, perfect on a warm afternoon, not very serious, and priced accordingly. The old paradigm went that way, but things have changed. Recognizing a market for high-end domestic whites that go beyond chardonnay, California wineries have been increasingly releasing sauvignon blancs that bring heavyweight intent to a lightweight grape. I opened a bottle of 29 Estate to share with a couple of friends. Oyster shells littered the table and we had already worked through a pedestrian sauvignon blanc. My friend's wife took a sip and declared, "It's a white wine with the complexity of a red wine." Not a bad way of putting it. The Vineyard 29 offering is rich and full-bodied with citrus notes that you expect from a sauvignon blanc. But a lot more goes on.

The sensitivity of grapes and vines at different phenological stages to the uptake of contaminants from smoke, especially smoke-derived volatile phenols, is outlined, and the pathways for entry and metabolic transformation of volatile phenols are discussed. The potential for translocation of phenolic contaminants within the grapevine and the differences in uptake of smoke contaminants of different grape cultivars are also discussed, along with preliminary work on dose/response relationships regarding concentration and duration of exposure and subsequent expression of smoke taint in wine. The chemical basis of smoke taint in wine is described, and the relationship between volatile phenols from combustion of wood/lignin and their glycosides, and sensory panel ratings of smoke attributes in affected wines is discussed.

Virginia has a rich history of grape growing and winemaking, and we’ve selected the best grapes we can get our hands on for our Mermaid Wines. We primarily work with fruit from our Charlottesville vineyard, with occasional sourcing from other locations if we see the opportunity to make something special. We’ve put together some really enjoyable wines for you to try – some classic, some fun, all delicious. Secondly, you’ll see wines from all around the world. Some you’ll recognize, others you might not. These selections lend to our wine bar-style atmosphere and really enrich the experience by offering a wide range of wines to be tried. They’re all available by the bottle, and most by the glass and flight as well, right alongside our Mermaid Wines.
