4 As we are now in Lent the Lent courses have begun. It is great that people have a choice of courses to go on in different churches, as it makes these more accessible to the many whose busy lives leave them little spare time. Lent of course is a time of reflection in which we discipline ourselves to undertake something that reminds us everyday of our relationship with God. Many people give up something and for me this is sweet things. Others will take up something, for example reading the Bible everyday or helping others in the . This is time to reflect on our faith and how Jesus died for us and rose again and in doing so gave us hope. Ingredients Lent recipe · 2 tablespoons butter · ½ cup olive oil · 1 cup chopped fresh, parsley leaves · 1 large onion, chopped · 2 tablespoons finely chopped fresh mint leaves · 2 potatoes, peeled and cut into large dice · 1 teaspoon dried oregano · 3 courgettes, ends trimmed & cut into 2-inch lengths · 1 teaspoon salt · ½ pound green beans, ends trimmed and cut in half · Freshly ground black pepper to taste · 4 large, ripe tomatoes (about 1½ pounds), quartered · 1 bay leaf · 8 spring onions (white & green parts), 1-inch pieces · 2 cups water Instructions · 1 pound chopped spinach, strong stems removed 1. In a casserole, melt the butter with the olive oil over medium heat. When the butter stops sizzling, cook the onion until soft, 5 to 6 minutes. Add all the remaining ingredients, except the water and spinach, and toss so everything is coated with butter and oil. Add the water, and bring to a boil. Reduce the heat to low, cover, and cook until the potatoes are tender, stirring occasionally, about 45 minutes. 2. Add the spinach, cover again, and once it wilts, after about 5 minutes, remove the pot from the burner. Serve hot or at room temperature with crusty bread.
