Each glass of this elegant and complex wine features the history, tradition and vocation of a territory with a landscape rich not only in vineyards, but also in olive trees, chestnut woods and brush. The Wine Trail, with the sea on side and the hills on the other, is a natural frame gifting grapes and wines with unique and unmistakable features. Production Area: Castagneto Carducci, province of Livorno, (Tuscany) Italy Vines: Merlot, Cabernet Sauvignon, Syrah Plants per Hectare: 5000-5500 Training System: Spurred cordon Harvest Period: End of September - Beginning of October Yield per Hectare: 50-60 q/Ha Characteristics: Production Area > Grapes are grown in vineyards with North-South exposure at 30 - 60 mt a.s.l.. > Thanks to ventilation and sharp temperature excursion, grapes reach ideal maturation and acquire a high concentration of polyphenolic compounds, making the wine more elegant. > The soil has a predominant skeleton and is rich in calcareous clay, silt and sand, creating a draining terrain which is perfect for winegrowing. Production Process > Grapes are hand-picked, pressed and destemmed. > Fermentation takes place in steel tanks vats at a controlled temperature (24-26° C ) with maceration that lasts 18-20 days and daily pump-overs. > The process of “pumping over” involves breaking the cap of the skin formed on top of the vats during fermentation. > The purposes of “pumping over” are: > Dissolving substances contained in the skin into the must; > Aerating the must to favor the proliferation of yeasts; > Cooling the fermenting must. > After this process, the skins are separated from the must and the malolactic fermentation takes place. The wine thus becomes smoother and develops more complex aromas. > The wine is then naturally cold stabilized and aged in French and Slavonian oak barriques (2.25 hl) for 12 months. Aging brings a more rounded and softer character to the wine, stabilizing its color and enriching its bouquet. > Il Vino dei Poeti Bolgheri Rosso DOC is then aged in bottle. According to wine regulations, it is released on the market only after 1st September of the year following the harvest. BOLGHERI ROSSO DOC BOTTEGA Organoleptic Characteristics: Color and Appearance: Intense ruby red with garnet tinges. Bouquet: Vinous, mineral, with hints of small red fruits and plum, finishing with delicate balsamic and spice notes. Taste: Full, velvety and with a good structure, with silky, non-aggressive tannins and a pleasant acidity; in a perfect balance with the bouquet, the palate perceives mineral notes and small red fruits. Chemical Characteristics: ABV: 14% Sugar, g/l: <3 Total Acidity, g/l: 5,00-6,50 Serving Temperature: 16-18 °C Serving Suggestions: It is a perfect match with meat, including chicken, veal, duck, beef and steer, roasted or braised.     GATTABUIA BOLGHERI DOC Grapes: 70% cabernet sauvignon, 30% merlot Denomination: Bolgheri DOC Area of production: Tuscany, Bolgheri Area Bolgheri also known as the 'the golden oasis of the Maremma' is probably the most famous DOC of Maremma Tuscany, situated in the province of Livorno of Tuscany and lies roughly halfway between Livorno in the north and Grosseto in the south, just inland from the Mediterranean. The name of the DOC is also the name of the wine inspired, as it is usually the case of Tuscan famous wines, from the name of the ancient town Bolgheri , located in the town of Castagneto Carducci. It stretches between the hills and strip of sea delimited by San Vincenzo and Cecina, on that part of the Tuscan coast which was dominated by the Etruscans in ancient times, and has a very old winemaking tradition. Soil & Climate : The area is subject to Mediterranean climatic conditions, but with the influence of cooling breezes off the sea. Considerable variations between day and night temperatures ensure development and maintain acidity. A layer of clay, with sand and mud imbedded in small shards is common to this very small DOC. Some bright red sandy soil, in some places interspersed with pebbles, typically gray coloured with white veins. Winemaking: During the winemaking process we seek to assure balance, elegance, texture and length of flavor. Only the best Cabernet and Merlot grapes selected during the harvest are destined for the Gattabuia. After ripening fully, the grapes are vinified separately, undergoing prolonged temperature-controlled maceration in staineless steel tanks, with frequent pumping on a daily basis to ensure the right extraction of color, complexity and soft tannins.
