UPAYA KEDAI BAJIGUR DALAM MENCIPTAKAN KEPUASAN PELANGGAN (Studi Pengendalian Mutu di Kedai Bajigur Mbak Ika Yogyakarta) Anisa Picata Melanaise1 dan Elda Pangesti2 Email : [email protected] [email protected] ABSTRAC Bajigur is one of the traditional beverage from West Java. Beverages made from spices such as ginger and with a mixture of coconut milk, palm sugar, coffee, salt, and pandan leaves. Kedai Bajigur Mbak Ika is one of the entrepreneurs who sell traditional Bajigur beverage. In maintaining customer satisfaction, Kedai Bajigur Mbak Ika provides various efforts in improving the quality of its products. This study aims to determine what efforts are given Kedai Bajigur Mbak Ika in creating customer satisfaction. Penenlitian method used is qualitative descriptive method by collecting data through documentation and interview. The interview was conducted at Kedai Bajigur Mbak Ika with the owner of the shop, Mbak Ika along with two buyers. The results of this study indicate that Kedai Bajigur Mbak Ika undertakes such efforts as asking customers' opinions about their products, while maintaining the quality of Bajigur without reducing the basic ingredients, and if the ingredients rise in the market of Kedai Bajigur Mbak Ika will raise the price without reducing the portion. These efforts make Kedai Bajigur Mbak Ika customers remain loyal. Keywords: Bajigur, product quality, customer satisfaction ABSTRAK Bajigur adalah salah satu minuman tradisional yang berasal dari Jawa Barat. Minuman yang berbahan dasar dari rempah-rempah seperti jahe dan dengan campuran santan kelapa, gula aren, kopi, garam, dan daun pandan. Kedai Bajigur Mbak Ika merupakan salah satu wiraswasta yang menjual minuman tradisional Bajigur. -

BAB II TINJAUAN PUSTAKA A. Lumpia Lumpia merupakan hasil perpaduan budaya kuliner Tionghoa dan Jawa. Lumpia dijadikan salah satu Signature Dish kuliner kota Semarang. Lumpia Semarang memiliki kekhasan sendiri, terlihat dari tampilan ukurannya yang lebih besar dan cita rasanya dibandingkan daerah lain. Lumpia adalah makanan yang berupa dadar yang berisi daging, rebung dan sebagainya lalu digulung dan digoreng namun juga ada yang direbus. Lumpia berasal dari kata lun bing, yang berbunyi lun pia berarti kue bulat. Lumpia Semarang diberi nama berdasarkan bentuk makanannya yaitu lun artinya gulung (Bahasa Jawa) dan pia artinya kue (bahasa Hokkien). Jadi, lun pia atau lumpia adalah kue yang berbentuk gulung (Susanti, 2015). Lumpia Semarang terbuat dari kulit lumpia yang dibuat menggunakan tepung terigu kemudian diisi dengan menggunakan rebung sebagai bahan utamanya dan daging ayam, udang atau telur ayam sebagai campurannya. Lumpia disajikan dengan cara basah atau digoreng lalu disajikan bersama saus lumpia dan acar mentimun. Komposisi yang terdapat dalam Lumpia Semarang membuat Lumpia Semarang tinggi akan serat karena terbuat dari rebung, namun juga tinggi akan karbohidrat, lemak dan protein karena kulit Lumpia Semarang dibuat dari tepung terigu, isi yang menggunakan daging ayam dan telur, tambahan bumbu seperti gula pasir dan kecap manis, dan juga saus lumpia yang terbuat dari tepung sagu dan gula merah. 4 5 1. Rebung Rebung atau tunas muda bambu merupakan bahan utama yang digunakan dalam pembuatan lumpia. Sejumlah pedagang lumpia di Semarang memenuhi kebutuhan rebung dengan mendatangkan rebung dari daerah lain seperti Kabupaten Demak dan Wonosobo (Widiarti, 2013). Salah satu pedagang lumpia di Semarang mengungkapkan tidak kurang dari 100 kg rebung setiap hari diperlukan pada hari biasa dan pada hari libur rebung yang dibutuhkan dapat mencapai ± 400 kg (Widiarti, 2013). -

Over the last two decades, the area under oil palm has almost tripled and its production more than quadrupled. This development is mainly attributed to the rising demand for vegetable oils and biofuels, favorable government policies in producer countries, as well as oil palm´s superior production potential and profitability compared to alternative land uses. Over 85% of the world´s palm oil production originates from Indonesia and Malaysia, which offer favorable agro-ecological growing conditions with relative abundance of cultivable land and agricultural labor. While the early expansion of oil palm was mainly driven by large scale private sector plantations, the more recent expansion of oil palm is largely driven by smallholder farmers. The first oil palm smallholders participated in government-supported out-grower schemes. Whereas such schemes still exist, most of the oil palm growth among smallholders is now due to independent adoption. At present, smallholders account for 41% of the total oil palm area and for 36% of the total fresh fruit bunch (FFB) production in Indonesia. If current trends continue, smallholders are expected to dominate the Indonesian palm oil sector in the near future. -

Its existence has been influenced by the concoction of alcoholic beverages which adversely affects the traditional alcoholic beverages’ image. These beverages are actually Intellectual Property Rights, IPR-based products of cultural heritage with indications of origin that have characteristics so that they cannot be compared to other countries’ alcoholic beverages, even though current regulations still regulate the opposite. This paper examines the legal protection of Indonesian traditional alcoholic beverages which are also adapted to their characteristics and the influence of Indonesian legal culture on these traditional alcoholic beverages. This research is a normative study with statutory, conceptual, and comparative approach method with South Korea and France as a comparison. Prudent and objective legal protection from the point of view of IPR for traditional alcoholic beverages is expected to develop positive aspects while still anticipating negative ones. This study concludes that Indonesian traditional alcoholic beverages that fulfill 3 unique characteristics can be protected as intangible cultural heritage (public property) or an indication of origin (belongs to local communities), although what is more appropriate now is an indication of origin so that the Government needs to adjust the regulatory design, especially at the national level, according to the indication of origin.
