    BAB I PENDAHULUAN 1.1 Latar Belakang Penelitian Perkembangan ilmu pengetahuan dan teknologi yang terjadi sekarang ini berpengaruh besar terhadap perkembangan dan kemajuan dunia bisnis. Perkembangan tersebut mengakibatkan timbulnya tingkat persaingan yang semakin ketat antara perusahaan yang satu dengan yang lain. Perusahaan manapun pasti memimpikan produk dan jasa yang dihasilkan dapat menguasai pasar. Oleh karena itu, para pengusaha harus kerja keras dan cerdas menggunakan strategi agar mampu mempertahankan perusahaannya. Di sini juga perusahaan harus betul-betul memahami apa yang diinginkan konsumen selama ini, sehingga produk yang ditawarkan perusahaan dapat memenuhi apa yang diinginkan konsumen pada akhirnya konsumen merasa puas. Persaingan pada dunia bisnis terjadi hampir pada seluruh jenis industri dan jasa, begitu pula yang terjadi pada industri mie instan. Mie instan merupakan salah satu kebutuhan bagi keluarga yang digunakan sebagai pengganti nasi. Peluang bisnis ini sangat menjanjikan keuntungan bagi produsen. Persaingan pada mie instan sudah menjadi persaingan gaya hidup masyarakat. Hal ini ditandai dengan banyaknya pilihan merek mie instan yang ada di pasar. Keadaan tersebut menuntut perusahaan untuk kreatif dan inovatif di dalam membuat pangsa pasar terhadap produknya. Adanya peluang bisnis pada industri mie instan menyebabkan banyaknya perusahaan bergerak pada industri tersebut sehingga 1 2 saat ini banyak merek mie instan yang beredar di pasar yang dapat dilihat pada Tabel 1.1. With its enormous geographic and cultural diversity across the archipelagos, it is evident that Indonesian cuisine is rich in variety and taste. As such, food can be utilised as a strategic means to boost the tourism industry of the country. In the past 5 years, the Indonesian government has given a great support for the development of culinary tourism as one special interest tourism sector that is promoted extensively to the international market. Promoting Indonesian culinary tourism should not be merely exposing the ample varieties of the traditional food that Indonesia has, but more importantly, telling the market about the socio-cultural values behind the food itself. This study aimed to portray how Indonesian food culture has been shaped, developed, and held as the value embedded in the society and has been passed from one generation to the next. Food processing through ionizing radiation as a food safety measure can be applied to the targeted foods either at a medium or high radiation dose, either alone or in combination with other techniques. Radiation sterilization of ethnic ready to eat foods has been considered as safe. Products which have high sensory qualities, hygienic and nutritionally sound may play a major role in accelerating recovery process through maintaining the dietary diversity of such population groups. In this study, the ethnic safe ready to eat (RTE) foods prepared were those from animal origins, i.e., fish, red meat and poultry meat, respectively while the formula, recipe and design product type was maintained based on WHO Recommended Dietary Allowance (RDA) for immuno-compromised patients.

Secara harafiah, kuliner adalah kata yang biasa digunakan untuk merujuk pada sesuatu yang berhubungan dengan memasak atau profesi kuliner. Profesi kuliner sendiri dapat diartikan profesi untuk memasak atau mempersiapkan produk makanan, seperti chef, management restaurant , ahli penata diet, ahli gizi dan sebagainya.
