    UPAYA KEDAI BAJIGUR DALAM MENCIPTAKAN KEPUASAN PELANGGAN (Studi Pengendalian Mutu di Kedai Bajigur Mbak Ika Yogyakarta) Anisa Picata Melanaise1 dan Elda Pangesti2 Email : [email protected] [email protected] ABSTRAC Bajigur is one of the traditional beverage from West Java. Beverages made from spices such as ginger and with a mixture of coconut milk, palm sugar, coffee, salt, and pandan leaves. Kedai Bajigur Mbak Ika is one of the entrepreneurs who sell traditional Bajigur beverage. In maintaining customer satisfaction, Kedai Bajigur Mbak Ika provides various efforts in improving the quality of its products. This study aims to determine what efforts are given Kedai Bajigur Mbak Ika in creating customer satisfaction. Penenlitian method used is qualitative descriptive method by collecting data through documentation and interview. The interview was conducted at Kedai Bajigur Mbak Ika with the owner of the shop, Mbak Ika along with two buyers. The results of this study indicate that Kedai Bajigur Mbak Ika undertakes such efforts as asking customers' opinions about their products, while maintaining the quality of Bajigur without reducing the basic ingredients, and if the ingredients rise in the market of Kedai Bajigur Mbak Ika will raise the price without reducing the portion. These efforts make Kedai Bajigur Mbak Ika customers remain loyal. Keywords: Bajigur, product quality, customer satisfaction ABSTRAK Bajigur adalah salah satu minuman tradisional yang berasal dari Jawa Barat. Minuman yang berbahan dasar dari rempah-rempah seperti jahe dan dengan campuran santan kelapa, gula aren, kopi, garam, dan daun pandan.     TEKNOLOGI DAN KEJURUAN, VOL. 38, NO. 1, FEBRUARI 2015: 77-88 PENGARUH RASIO TEPUNG BERAS DAN TAPIOKA TERHADAP MUTU ORGANOLEPTIK DAN ELASTISITAS KULIT LUMPIA NON TERIGU Laili Nur Fitriana Aisyah Larasati Issutarti Abstrak: Tujuan penelitian ini adalah: (1) mengetahui kulit lumpia non terigu terbaik dengan perlakuan rasio tepung beras dan tapioka; (2) membandingkan mutu organo- leptik dan elastisitas kulit lumpia non terigu terbaik dengan kulit lumpia terigu; (3) mengetahui perbedaan atribut sensori antara lumpia goreng menggunakan kulit lum- pia non terigu terbaik dan kulit lumpia terigu. Penelitian eksperimen ini menggunakan Rancangan Acak Lengkap (RAL) dengan tiga kali pengulangan. Hasil penelitian me- nunjukkan bahwa: (1) kulit lumpia non terigu terbaik dengan rasio tepung beras dan tapioka 70,00:30,00%; (2) mutu organoleptik dan elastisitas kulit lumpia non terigu terbaik dan kulit lumpia terigu berbeda nyata; (3) lumpia goreng menggunakan kulit lumpia non terigu dan kulit lumpia terigu memiliki atribut sensori berbeda nyata. Kata-kata Kunci: kulit lumpia non terigu terbaik, kulit lumpia komersial dari terigu, mutu organoleptik, elastisitas Abstract: The Effect of Ratio of Rice Flour and Tapioca Starch on the Elasticity and Organoleptic Quality of Non-Wheat Spring Roll Skin. The purpose of this study is: (1) to determine the best non-wheat spring roll skin based on the treatment of ratio of rice flour and tapioca starch; (2) to compare the organoleptic quality and the elasti- city of the best non-wheat to the wheat spring roll skin; (3) to identify overall sensory attributes differences between fried spring roll that use the best non-wheat and the wheat spring roll skin.

Tujuan penelitian ini adalah mendeskripsikan satuan gramatikal dan dasar penamaan nama kue jajanan pasar di Kios Snack Berkah Bu Harjono Pasar Lempuyangan Kota Yogyakarta. Objek penelitian ini berupa nama kue jajanan pasar di Kios Snack Berkah Bu Harjono Pasar Lempuyangan Kota Yogyakarta. Metode pengumpulan data dilakukan dengan menggunakan metode simak (pengamatan atau observasi), yaitu metode yang digunakan dengan cara peneliti melakukan penyimakan penggunaan bahasa (Mahsun, 2005: 242). Selanjutnya digunakan teknik catat dan teknik simak bebas libat cakap. Teknik simak bebas libat cakap adalah peneliti berperan sebagai pengamat penggunaan bahasa oleh informannya (Mahsun, 2005: 92). Serta digunakan pula teknik wawancara. Selanjutnya data yang sudah diklasifikasi dianalisis menggunakan metode agih dengan teknik sisip, bagi unsur langsung (BUL), dan teknik baca markah.

Keduanya memiliki potensi pasar yang tinggi, karena kedua usaha mikro ini dinobatkan sebagai kampung kue di Surabaya oleh Disperindag Kota Surabaya. Namun demikian pada saat yang sama, kedua usaha mikro juga memiliki masalah yang krusial, diantaranya meliputi beberapa alat produksi vital masih sederhana bahkan ada yang tidak dimiliki hal ini mengakibatkan kuantitas dan kualitas produksi belum bisa memenuhi permintaan pasar; ketrampilan dalam membuat roti selama ini masih otodidak sehingga belum banyak dalam melakukan deferensiasi produk; kemampuan dalam mengakses permodalan juga rendah karena selama ini tidak mampu membuat pemukuan, laporan keuangan dan business plan. Disamping belum mampu memasarkan secara online, karena tidak memiliki ketrampilan. Menyadari itu semua, berdasarkan kondisi eksisting mitra dan justifikasi masalah yang disepekati mitra, maka metode yang digunakan untuk meningkatkan kinerja dua mitra tersebut dengan menggunakan metode berupa 1). Pemberian bantuan TTG Mixer kapasitas 5 kg dan mesin pemanggang untuk mitra ”AA”. Sedangkan TTG Mixer kapasitas 5 kg dan mesin dandang kukus bersaf 3 untk mitra ”Rahayu”. 2).     Symbolism as Guidance to Live a New Life in Javanese Culture (a Semiotic Analysis) Avi Meilawati Yogyakarta State University Abstract Ideas, human behavior activities, and objects is a form of culture as the result of human thought. Those three forms are giving birth to an indigenous culture or tradition in the community. Tingkeban ceremony is one of the traditional Javanese ritual performed on women who are pregnant in her 7 months. The ceremony is believed to be the requirement before birth, contains hope for the children, mother, and families will be given the ease and safety up to the time of delivery. These hopes are realized in the representation of objects and expressions to the tools, equipment, and procession at the tingkeban ceremony. Hopes and advices on tingkeban ceremony are aimed at father, mother and newborn babies in hope that the family can be a superior happy family, and prosperous. In general, the balanced family, happy, prosperous, will deliver a child that grow well too. From this little family, a system of the larger society, even the country will also be systematically balanced and peace. A. Background Culture is the result of the human mind that is actualized through varieties and colors in evolving life of human, flowing to fill the needs of life. Cultural output is realized as the result of the thoughts, observations and experiences over time, even from the summary of the unborn society, through the stories and relics of the past, of course. One form of cultural product is a traditional ceremony, which is the result of knowledge, the result of thoughts that inspires people to make a criteria or a space to enjoy it, outside of what can be seen, heard, and touched that currently being favored through forms of knowledge called technology.
