Bobby’s Burger Sauces
American Pharoah Pesto-Red Pepper Sauce
Ingredients: 1/4 cup Hellman’s light mayonnaise 2 tbsp prepared pesto 1 tbsp finely chopped roasted red pepper
Directions: Combine all ingredients together in small bowl, set aside. Grill Bobby Chez burgers and top with sauce.

Bobby Chez BBQ Sauce
Ingredients: 15 red plum tomatoes cut in half 1 red onion chopped coarsely 1 cup ketchup 1/2 cup Worcestershire sauce 2 chipotle chilies 1/2 cup dark brown sugar
Directions: Sautee onion and tomato until very soft (the mixture is better if you sauté until a little burnt). Add the rest of the ingredients to the mixture. Divide into two batches. Place half of batch in Cuisinart (not included) and blend until smooth. Place aside. Blend second batch until smooth. Combine and enjoy!
------Bacon and Tomato Jam
Ingredients: 1/2 lb smoked Applewood bacon 2 lb ripe tomatoes, chopped 1 yellow sweet onion, finely diced 1 cup white sugar 2 1/2 tbsp apple cider vinegar 1/2 tsp salt 1/4 tsp black pepper Dash of hot pepper sauce (Tabasco, Siracha)
Directions: Cook the bacon in a large skillet over medium-high heat turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels. Crumble bacon when cool.
Stir tomatoes, sweet onion, sugar, apple cider vinegar, salt, black pepper, and hot sauce together in a saucepan and bring to a boil, stirring constantly to dissolve sugar. Stir in crumbled bacon and cook over medium heat, stirring often, until the spread is very thick, about one hour. Adjust salt and pepper.
Cool and spoon into a pint glass jar with a lid. Keeps refrigerated for one week or frozen for two months. ------
Blue Cheese and Orange Marmalade Dressing
Ingredients: 6 oz blue cheese crumbled 2 oz orange marmalade 1 tsp grated orange zest
Directions: Combine all ingredients, mix until blended. Chill in refrigerator for at least half an hour. Serve when ready.
Chipotle Mayonnaise Sauce
Ingredients: 6 oz Hellmann’s mayonnaise Chipotle Chile finely chopped 1 tsp sautéed garlic 1 tbsp Adobo Sauce Juice from 1/2 lime
Directions: Combine all ingredients together. Let stand for one hour and serve on top of Bobby Chez Burgers.

Honey Mustard with Cilantro and Chili Pepper
Ingredients: 4 oz Dijon mustard 1 oz honey tsp cilantro, finely chopped shallot, finely chopped 1/4 tsp red pepper seed
Directions: Combine all ingredients, mix, and serve when ready.

1000 (Thousand) Island Jalapeno Dressing
Ingredients: 6 oz Thousand Island Dressing 1 oz capers Jalapeno, finely chopped
Directions: Combine all ingredients, mix, and serve when ready.
