He ran several grocery stores in Budapest and Miskolc before immigrating with his wife and young son in 1956. Soon after arriving in the United States, the family returned to its meat cutting and grocery roots, opening the first Bende store in Chicago’s Burnside neighborhood. Sev- eral stores followed, as did a reputation for preparing out- standing smoked meats. While we have grown and adopted new technologies, we still use the original old world recipes carried from Hungary by our grandfather. As the recipes are based on different measurements and temperature scales we have added conversion tables for your (and our) help. At the end of the recipe book you will find a vocabulary list with the most common ingredients for the recipes in the languages used in the countries involved in the project. For the order of recipes we decided to begin with starters and soups being followed by various main courses and desserts. Finally we have added a chapter about typical cookies and cakes. We learned during the project work, that making cookies yourself is not common in many of the countries involved in this project, but nevertheless many nice cookies recipes exist – we wanted to give them some space here and we hope that you will try out some of them! We have added a DVD which shows the making of some of the dishes during the meetings and also contains the recipes.

    Napsugár Vendéglő Étlap A Napsugár Vendéglő az egykor Józsa-kocsmaként ismert vendéglátóhelyen létesült. Az egykori tulajdonosok emléke előtt tisztelegve portréikat a bejárattal szemben helyeztük el. 1997. március 11-én vásároltuk meg az épületet és ugyanazon év áprilisában meg is nyitottuk a vendéglőt. Az Európai Unióhoz való csatlakozást egy nagy átalakítással ünnepeltük, 2003-ben kapta meg az épület a mai külsejét, 2004 májusától pedig már mint melegkonyhás vendéglő működünk. Persze azóta sem tétlenkedünk, hiszen a visszajáró vendégek is tapasztalhatják, hogy mindig "újítunk" valamit.     Napsugár Vendéglő Étlap A Napsugár Vendéglő az egykor Józsa-kocsmaként ismert vendéglátóhelyen létesült. Emlékük előtt tisztelegve portréikat a bejárattal szemben helyeztük el. 1997. március 11-én vásároltuk meg az épületet és ugyanazon év áprilisában meg is nyitottuk a vendéglőt. Az Európai Unióhoz való csatlakozást egy nagy átalakítással ünnepeltük, 2003-ben kapta meg az épület a mai külsejét, 2004 májusától pedig már mint melegkonyhás vendéglő működünk.     TRADITIONAL FOLK DIET: THE CULINARY EXAMPLE OF GREATER-KECSKEMÉT AND THE KISKUNSÁG (HUNGARY) (18-20. century) INTRODUCTION Perhaps it is not an exaggeration to say that there is no other part of the Hungarian folk culture which is so unreservedly tradition-bound and at the same time so unreservedly receptive as the culture of folk dietary customs. It is due to this intense attachment to traditions combined with an innovative openness that the gastronomic history of the peoples of Central-Europe is so complex and diverse, abounding with several topics never to be sorted out. Surely, there was a real competition between the various nations, especially during the era of the Austro-Hungarian Monarchy, to acquire the privilege and have the reputation as the creator of certain widely popular dishes. In the culinary approach of the Hungarians, who had found their home and settled in the Carpathian Basin, there has always been an intention to adopt the European dietary customs. Onion, one of the most important basic materials, as well as garlic were first ordered to be brought into the country by Beatrix, the Italian spouse of King Matthias in the 15th century. At that time Hungarian cuisine was enriched by adopting the most sophisticated methods of the Italian cookery which preserved a great deal of the ancient Greco-Roman traditions. The 150-year-long Turkish rule (1526-1686) also left a distinctive mark on our gastronomic culture. Some of the dishes, brought here by the Turks, became part of the Hungarian national tradition. The most important impact and the change made by the Turks was that they introduced the treasures of the American continent: paprika, tomato and maize.
