Labor cost is too high. We should aim for 30%.

Other:

New York City is a unique market. Rents are very high (although our lease is very good). We can get away with squeezing a lot of people into a tiny space.

Our goal is to have COGS at 30%, Labor at 30%, Fixed Costs at 25% leaving 15% for Owner Draw and Investor Profit. In 2012 we hit 12% and in 2013 it was 10%.
