We wanted to take a bit of the work out - here are 15 fantastic wines priced at $49 or less selected for you from our admittedly way-too-big wine list. To make things even simpler, we put some basic tasting notes under each wine. Don't look for "reminis- cent of stone fruit with a hint of lychee" (who the heck knows what a lychee is anyway, let alone knows what they taste or smell like). “PET-NAT’S” - SPARKLERS The new hip sparkling wine: Petillant Naturel is really an ancient method of making sparkling wine. Petillant-Naturels or Pét-Nats, are made by stopping an unfinished fermentation and then bottling the wine before allowing the fermentation to complete, resulting in a sometimes cloudy wine that’s fizzy but less bubbly than modern . The Pét-Nat method is not limited to a specific region, but leading areas include the in France, and parts of Spain and Italy. But we’ve got a couple fantastic ones from right here in Maine and our neighbor Vermont as well.

A LITTLE BIT ORANGE The following wines have had just a bit of time spent on the skins - the next page has orange wines that have spent weeks, months or even a year on the skins

Another major trend is the advance of orange wines. Like Pet-Nats, what’s old is new again - having some skin contact for white wines is as old as wine itself. And the name is quite self-describing - these are white wines but instead of crushing the grapes and work- ing with the juice that runs off to make wine, the wine-maker leaves the juice together with the must (skins and seeds and stems) for anywhere from a few hours to a few days to a few weeks. You can guess what that results in: more color, from pale orange to bright amber depending partially on how long the skins were in contact with the juice; more body, from the additional compounds leached out of the skins; more flavor, more tannins, etc.

Most of these wines have been deliberately exposed to heat and/or oxygen by a variety of methods. In these cases, it’s a good thing, resulting in complex flavors and shelf stable wines, some of which can stay open with no deterioration, theoretically, forever. Generally, , rancios, and other oxidative wines are best enjoyed as aperitifs, and pair well with cheeses, char- cuterie, some seafood and other appetizers. DAIGINJO Sake that is made up of rice, water, koji mold, yeast and a portion of distilled alcohol, and the rice is milled 50% with 50% of each grain remaining.

Now that we have covered 4 of the 6 major categories of sake, it gets a bit more complicated, because sake can be made in different fashions to produce more variations of sake. For example if a brewer were to leave in some of the rice polishings the result would be a cloudy sake commonly referred to as Nigori (unfiltered sake). If a brewer decided to store his freshly brewed sake in cedar tanks this would result in Taru (cedar sake). If a sake has not been pasteurized the typical two times then the result is Nama (unpasteurized sake.)

If brewers decide to age their sake longer than a typical fermentation cycle, then the result is Koshu (aged sake). If brewers are looking to try something different, say by adding sake instead of more water to the brewing process, the result is Kijoshu (dessert sake). And lastly, if a brewer decides to allow his sake to reach peak fermentation without adding the typical amount of water to bring sake back to a diluted state of roughly 15%-16% alcohol level, then the result is a sake that has an alcohol percentage along the lines of 17%-19%, called Genshu (undiluted sake). Sine Qua Non is t. The wines have been titled with names such as Queen of Spades, Twisted & Bent, Imposter McCoy, The Bride, Poker Face and Red Handed, and the bottles come uncommonly shaped. Each label is hand made by Manfred with linocut art work of his own creation. This process requires each year’s wine’s names and labels to be individually approved by the Bureau of Alcohol, Tobacco, Firearms and Explosives, an unpredictable process subject to the whims and vagaries of regulators. Despite numerous and seemingly random rejections, Krankl has persisted with this expensive and time consuming process, creating a colorful, diverse and often-times humorous body of label art.
