The foothills surrounding , the traditional area in which the vine is cultivated. The vines date back to ancient times, perhaps to a period prior even to the Roman era. Latin poets including Virgil and Pliny the Elder praised the wine: the vines were cultivated more than two thousand years ago on the foothills around Treviso, between the river Piave and the Venetian Pre-Alps. With the establishment of modern production designations, the Prosecco grape took the name , and "Prosecco" today refers to the area of production of the new designation, which extends from Friuli to most of the Veneto region.

PRODUCTION TECHNIQUES The grapes are harvested in mid-September. They are lightly pressed to produce free-run must which, after decanting for 10 - 12 hours, is transferred to stainless steel tanks, where it is fermented at 64- 68°F for a period of between 15 and 20 days. The wine is then stabilized and clarified before re- fermentation, which takes place in steel autoclaves at controlled temperatures in order to develop the wine's characteristic perlage and fragrant bouquet. Re-fermentation is interrupted by cooling and filtration until the residual sugar is 18 g/l. Sparkling wines with this sugar content are defined as extra-dry, which is the classic version of Prosecco, and is ideal in achieving the perfect balance between softness to the palate and acidity.
