Pairing Pizzolato Fields 90 Point Best Buy Prosecco

Though often thought of as a special occasion or wine for a traditional aperitivo, prosecco can be paired with first courses such as Italian Baccalà Mantecato (savory salt cod spread) garlic shrimp and simple fish dishes or with Italian Casatella or Camembert cheeses. On a visit to Cantina Pizzolato in , , Irish chef and UK TV host Paula McIntyre said, “Prosecco is very much a drink I would think of as an aperitif, but after visiting Pizzolato and tasting the amazing range of Prosecco, I will definitely now be using it as an accompaniment to food rather than just drinking on its own.”

Prosecco Production

Italy’s most popular sparkling , Prosecco is made with 100% organic Prosecco () grapes. Pizzolato Fields Prosecco comes from the Veneto region and is produced using the Charmat method of production (also known as the Italian Method). Grapes are carefully harvested then given a gentle press and placed in a steel tank. Organic, regional yeast is added and the fermentation process of the base wine begins. After being carefully blended and tasted, the still wine is introduced into pressurized, temperature-controlled stainless-steel tanks, along with organic regional yeast and sugar, which stimulate the production of bubbles of carbon dioxide in the wine. As soon as the wine has reached the desired alcohol level, it is cooled and filtered, and all of the yeast used in the fermentation process is removed.
