Our Traditional Mead is crafted from Texas wildflower honey sourced from a farm on the Gulf Coastal Prairies outside of An- gleton, Texas. The site was chosen for its location far from sources that could affect the flavor of the honey it produces, which is nuanced and natural.
Winemaking
Traditional Mead if fermented dry to encourage stabilization and carefully control alcohol content. Additional wildflower hon- ey is then added to achieve ideal sweetness.
Tasting Notes
Our Traditional Mead is sweet and easy to drink. It maintains the character of the wildflowers from which it is derived, which changes with the season. Spring honey leads to mead with a citrusy character, Summer honey is more floral, and Autumn honey carries notes of tree fruits such as apples and pears. Price $11.25 per bottle/$85 per 5 gallon keg

Our Queen Mother’s Mead is crafted from Texas wildflower honey sourced from a farm on the Gulf Coastal Prairies outside of Angleton, Texas. The site was chosen for its location far from sources that could affect the flavor of the honey it produces, which is nuanced and natural.
Winemaking
Queen Mother’s was inspired by an entry in a 17th century reci- pe book; this was a recipe enjoyed in the royal court of Charles I. We ferment our honey with fresh and candied ginger, lemon peel, cloves, and osmanthus blossom. We also add an extra pinch of each near the end of the winemaking process.
Tasting Notes
The timeless flavor of the Queen Mother’s is less sweet and more herbal than other meads. The complex blend of citrus, spice, floral, and fruit leads to an enjoyable yet engaging experi- ence for the drinker.

Our Bochet is crafted from Texas wildflower honey sourced from a farm on the Gulf Coastal Prairies outside of Angleton, Texas. The site was chosen for its location far from sources that could affect the flavor of the honey it produces, which is nuanced and natural.
Winemaking
Our Bochet gets its characteristic flavor and amber coloration by slow-cooking the honey for 48 hours prior to fermentation. Each batch is racked three times to promote clarity and improve fla- vor.
Tasting Notes
The process of slowly burning the honey gives the Bochet a full, caramel-like flavor with undertones of berry. It finishes bitter- sweet with notes of dark chocolate and coffee.

Winemaking use local loose-leaf tea from Austin-based Independence Coffee. Earl Grey gets its signature scent from the oil of bergamot added to black tea.
Tasting Notes
The bergamot creates a soothing aroma and a soft citrus taste; complimenting the sweet Texas wildflower honey of our mead. Served hot or cold, it's a guaranteed winner for those with re- fined tastes
