2016 FINtage 408 Tasting Notes: Chardonnay Color: Pale to light straw Aroma: Key Lime, honeydew lemon, 2016 The FINtage 408 Chardonnay is a new approach to what vanilla and sweet oak Central Coast has been known as California Style Chardonnay; a full Flavor: Butter cream, golden delicious Chardonnay bodied, heavily oaked wine with a high presence of apples and sweet oak buttery characteristics. We took the same approach Structure: Medium Acid, soft tannins creating this wine, but backed o about 20 notches. and long soft nish Using estate grown chardonnay grapes, hand picked and Pairing: Cobb salad, butter poached culled from select lots and harvested locally at a family halibut and braised chicken owned and operated winery, we still used premium new Technical Information: French Oak to age this wine and utilized neutral oak to Blend: 100% Chardonnay provide the same structure without the oak impact. The Aged: 16 months on 30% New wine also went through malolactic fermentation to French Oak, 70% Neutral French Oak ensure a slight hint of butter. This is an approachable style of Chardonnay, pleasing for drinkers who enjoy an oaky Chardonnay, and those who prefer a less oaky style.
