Cabbage & Sauté Makes 4 Servings

Washington Farmers Market Nutrition Program Directions: Ingredients: 1. Sauté bell pepper, onion and garlic in 1 small bell pepper, chopped oil in a skillet. 1/2 small onion, chopped 2. Add cabbage to skillet and cook, 1-2 cloves garlic, finely chopped stirring occasionally, about 3 minutes. 1 tablespoon oil 1/2 small head cabbage, green or purple, 3. Add pre-cooked potatoes and spices, sliced thin or shredded stir to combine all ingredients. Cover 2 medium potatoes, cooked and chopped and cook 2 more minutes. Serve hot. Dash cayenne pepper (optional) • Leftovers can be made into soup by Pinch of salt adding chicken or vegetable broth. 1 tablespoon fresh parsley, chopped or 2 teaspoons dried parsley
