You’ve likely heard of Hurtigruten—the 124-year-old and cargo operator that stretches from Bergen to Kirkenes along Norway’s coast. While most people opt to travel along this “Express Route” aboard a coastal steamer on the well-known six- day journey, British Dave Cornthwaite had something else in mind: traveling the 1,500- mile route on a water bicycle. A motivational speaker, author, short film creator, and founder of the social en- terprise SayYesMore, Cornthwaite is also a record-breaking adventurer with nine world records under his belt. He specializes in self- propelled journeys, with this experience the 14th leg of his Expedition1000—a goal he set in 2004 to complete 25 journeys of at least 1,000 miles using different modes of non-motorized transportation. A few of his previous expeditions have included skate- boarding across Australia, sailing from Mex- ico to Hawaii, and kayaking from Oslo to Finland. I love how many classic Norwegian reci- pes require only a handful of ingredients that are likely already available in a well-stocked kitchen. Arme Riddere, also known as “Poor Knights,” is no exception. Much as with the French toast that Americans are familiar with, Arme Riddere is a great way to use day-old bread, as it gets puffed up and moistened with sweetened milk before being fried in a gener- ous pat of butter. What might seem different, though, is the use. Though today it seems to be widely con- sidered appropriate to eat it for breakfast or brunch, the impression I get from older, clas- sic Norwegian cookbooks is that it was more commonly considered a dessert. As a dessert, it’s traditionally served with red sauce and also can be served with berries and cream, perhaps a scoop of ice cream. But if you’re in the mood for breakfast, then by all means pour on some maple syrup, spoon on a mound of jam, and eat up.

Arme Riddere (Poor Knights)

4 thick slices day-old white bread ¼ tsp. cinnamon 2 eggs 1⁄8 tsp. ground cardamom 1 2⁄3 cup milk ⁄8 tsp. kosher salt 2 tbsps. sugar 1-2 tbsps. butter 1 tsp. vaniljesukker or vanilla extract* powdered sugar, for dusting

Arrange the bread slices on a dish large enough to hold them in one layer. In a medium bowl, whisk the eggs, milk, sugar, vaniljesukker or vanilla extract, cinnamon, cardamom, and kosher salt until smooth. Pour the mixture over the bread and let sit for 20 minutes, carefully flipping the slices halfway through (alternatively, dip the slices in the milk mixture and lay them in a dish to rest). Heat butter in a large skillet and add the bread, working in batches if necessary to avoid crowding them. Fry until golden, 2-3 minutes on each side. Dust with powdered sugar and serve immediately with your choice of toppings. Serves 2.

*If you don’t have vaniljesukker, Scandinavian vanilla sugar, go ahead and use a little vanilla extract. I’m a big fan of vaniljesukker—which is completely different from the vanilla sugar you might make by infusing granulated sugar with a spent vanilla pod—as it imparts a subtle yet distinct flavor. It’s available at stores like Seattle’s Scandinavian Specialties, which also sells it online.

Southern Florida is a magnet for Nor- wegian Americans, whether they have a per- manent address or are part-time snowbirds. Nordic Americans, especially those from the East Coast and the Midwest, flock to this area when the frost sets in. And of course there are those who just prefer this sunshiny area of the U.S. as a vacation destination. Whichever of these categories you fit into, one thing is sure: Norwegian Americans crave the sun just as much as their Norwe- gian counterparts. In some ways Southern Florida is the equivalent of the Norwegian love fest with the Canary Islands. In fact, during the week of the Fourth of July, I was in Pompano Beach, gazing at a lovely vessel named Valhalla on the Intra- coastal Waterway. Eclipse thoughts As we go to press, we’ve just come in from the parking lot where we watched the solar eclipse (90% here in Seattle).
