Because the spice is obtained from the inner bark of an evergreen tree in the laurel family that is native to Sri Lanka, Ceylon cinnamon is also called Sri Lanka cinnamon. Ceylon cinnamon is, however, cultivated in many Asian countries, including Vietnam. Geographical

and botanical origin aside, the primary differences between C. verum and other species of Spice Company Bay Monterey cinnamon is a more delicate texture and a sweeter flavor with -like undertones.

Cinnamomum cassia refers to the spice harvested from any of four species of trees native to China and cultivated throughout Indonesia, which are collectively called Chinese cassia or Chinese cinnamon. As fellow members of the laurel family and the Cinnamomum genus, they are closely related to Ceylon cinnamon but differ in chemical and physical structure. Cassia cinnamon has a significantly higher coumarin content and the darker-colored sticks, or quills, are much harder and difficult to break or powder. Cassia also has a more pungent than sweet flavor and aroma than Ceylon cinnamon.

Although Ceylon is considered the only true cinnamon and a finer grade of spice, the lesser expensive cassia is more commonly used for baking and even preferred in certain Indian dishes, including curries. Otherwise, both spices, whole and powdered, are generally used interchangeably.

In fact, the U.S. didn’t become a player until the late 17th century when Boston native Elihu Yale, a 20-year veteran of the British East India Company, earned his fortune from his own business based on clandes- tine trade contracts with the company’s foreign merchants.
