Over two- thirds of the population still depends on it for a liv- ing, and it accounts for nearly one-third of the region’s exports. In statistical terms, the region occupies a major position in the world in several agricultural commodities including with spice crops. Spices are important essential condiments in the SAARC countries and there are many spice crops commonly grown in the region. The total demands of these spices are increasing among the SAARC countries as well as outside the SAARC countries. Among the SAARC Countries, India holds an important position in the production of such commercial crops as spices, together with bananas, tobacco, oil seeds, and cotton. SAARC Member States have been made significant progress in Research and Development on these crops and have high export potentialities of spices. However, to achieve such progress our joint efforts would be the crux for remarkable achievement. Therefore, sharing of production and post-harvest technologies are important for development, improvement and marketing of spice crops. Thus, documentation of value chain activities (production, post-harvest handling, processing and storage) of spices would be mutually beneficial to each member country. Considering the diverse use and high potentiality of the value added products of the spice crops in South Asia, SAARC Agriculture Centre in collaboration with Indian Council of Agriculture Research (ICAR)-Indian Institute of Spice Research (IISR), Kerala, India organized a regional consultation meeting on “Technology sharing of spice crops in SAARC Countries”. This book “Challenges and Opportunities in Value Chain of Spices in South Asia” is a collection of papers contributed by the experts from SAARC Member States. I would like to take this Opportunities to express my sincere appreciation to Dr. Pradyumna Raj Pandey, Senior Program Specialist (Crops), SAARC Agriculture Centre, Dhaka and Mr. Indra Raj Pandey, Senior Horticulturist (Vegetable and Spice Crop specialist), CEAPRED Foundation, Nepal for their hard work to put together the manuscript in this form. Concerted efforts for the development and strengthening of the spice crop economy attains urgency considering the potential of spice crops to engineer positive and significant changes in the livelihood status of millions of small holder producer households spread across the various SAARC Member States. It was in this context that SAARC Agriculture Centre (SAC), Dhaka partnered with ICAR- Indian Institute of Spices Research, Kozhikode, a constituent of Indian Council of Agricultural Research, to organize the Regional Expert Consultation Meeting on “Technology Sharing of Spice Crops in SAARC Countries” at Kozhikode, Kerala State, India during 11-13 September 2017. The core objective of the meeting was to discuss the current status and level of production and processing technologies for spice crops available in the SAARC Member States with a special focus on black pepper, cardamom, cinnamon, ginger and turmeric. This meeting with an exclusive focus on spice crops of SAARC Member States is first of its kind. As one of the leading institution in spices research at the international level, ICAR-IISR is proud to host the gathering of an elite group of policy planners, researchers and other stakeholders from the SAARC region to discuss pertinent issues, identify critical gaps and evolve efficient strategies for strengthening the spice value chain stratrting from the primary producers to the final consumers. The SAARC region has the potential to emerge as the global hub of production and supply of high quality and food safe spices produced under sustainable practices by leveraging the synergies amongst the member states and by developing harmonized and common market and trade development strategies. Sharing of specific strengths in production and processing technologies of the spice crops can improve the productive efficiency of the region and help in optimizing resource allocation among research and development priorities. Institutional innovations in organizing spice production and processing while ensuring community participation and ownership can also bring revolutionary changes in the spice economy of the SAARC Member States. The forecasted population increase is up to 1619 million in 2050 with increased GDP and per capita food spending. The per capita demand for spices is expected to increase many fold by 2050. Therefore, there is urgent need to continuously strive to increase spices productivity by enhancing input use efficiency and reducing post-harvest losses with an eye on reducing the cost of production. Moreover, spice crops constitute an important element in the agrarian economy of all the SAARC Member States. It is therefore important to evolve strategies aimed at strengthening this sector for ushering in robust growth in agricultural sector. The growth potential of this sector and the potential to bring about equitable development in the agrarian sector underline the urgent need for the SAARC Member States to evolve creative policy guidelines and strategies for promoting overall development of the spices sector. Maton) is one of the major spice crops of India, which were the world’s largest producer and exporter of cardamom till 1980. There has however been a reduction in production, mainly because of Katte disease, caused by cardamom mosaic virus (CdMV) a potyvirus. Viral diseases can be managed effectively by early diagnosis using serological methods. In the present investigation, CdMV isolates were sampled from Mudigere, Karnataka, ultra purified, and electron micro graphed for confirmation. Polyclonal antibodies were raised against the virus and a direct antigen coating plate Enzyme linked immunosorbent Assay (DAC-ELISA) and Dot-ELISA (DIBA) standardized to detect the virus in diseased and tissue cultured plants. Early diagnosis in planting material will aid in using disease free material for better yields and hence increased profit to the farmer.

    Sooka Masala Lamb Dry Spiced Lamb Curry Method 01 To roast the spices place cumin, coriander, chillies, cassia, green cardamom, and cloves in frying pan and heat until they are fragrant and turn a shade darker. Transfer to a bowl and leave to cool. 02 Place the spices into a grinder and blitz to a fine powder. 03 Coat the meat with the spice mix and set to one side. 04 Heat oil and add the black cardamom then add the chopped onion and garlic. Fry on a high heat and reduce and cook gently until they turn a dark golden brown colour. 05 Add the ginger, turmeric, tomatoes and stir. Allow the tomatoes and onions to melt together creating a thick masala paste. Ingredients 06 Add the spiced meat and salt then fry for 5 minutes. 600g Leg of lamb, trimmed, Masala sauce 07 Reduce the heat to the lowest setting and place the lid on washed & chopped into the pan. Leave it to cook in its own juices for 40-50 4 tbsp oil chunks minutes stirring occasionally until the meat is soft and 2 black cardamom Spices to roast tender. 2 large onions, finely 2 tsp cumin seeds chopped 08 When the meat is cooked through increase the heat and 4 tsp coriander seeds 5 cloves of garlic, finely fry or ‘bhun’ for 5 minutes until the sauce thickens and 2-4 dried whole red chillis chopped starts to cling to the meat. 3cm stick of cassia bark 2 tbsp ginger, grated 09 Throw in the chopped coriander to serve.

    CARDAMOM PROCESSING Introduction Cardamom is a valuable spice that is obtained from the seeds of a perennial plant ( Elettaria cardamomum ). Cardamom originates from the coastal area of India. It is now grown in Guatemala, Tanzania, Sri Lanka, El Salvador, Vietnam, Laos and Cambodia. India is the main exporter of dried cardamom. Cardamom must be dried before it is stored and sold for market. This brief outlines the important steps that should be taken pre-harvest and post-harvest to ensure that the dried cardamom is of top quality for the market. There are two main types of cardamom: Small green cardamom ( Eletteria cardamomum ) Large red/black cardamom ( Amomum subulatum Roxb) The most common type is the small green cardamom while large cardamom is mainly grown in India, with some in Nepal and Bhutan. They both come from the Zingiberaceae family of plants. Cardamom production The Cardamom bush grows to a height of about 3m. It grows best in a warm humid place where there is plenty of rain and rich soil. It can grow at altitudes up to 1370m above sea level. The bush requires shade and is usually grown under natural forest cover. The tree produces flowers after it is 2-3 years old. The first crop of seed capsules is harvested in the third year after planting. In India, the tree flowers in April/May and continues until July/August. The seed capsules are harvested at 30 to 40 day intervals. Harvesting Harvesting at the correct stage of maturity is essential to produce high quality cardamom capsules.

DNA isolated by this method is highly suitable for PCR, restriction digestion and RAPD analysis. The RNA extraction method described here represent the presence of plant mRNA, small RNAs and viral RNA and, the isolated RNA proved amenable for RT-PCR and amplification of small and viral RNA. Nucleic acids extraction protocol developed here will be useful to develop genetic marker for cardamom, to clone cardamom genes, small RNAs and cardamom infecting viral genes and to perform gene expression and small RNA analysis.
