Savio Soares works with small vignerons whose philosophy is a philosophy of life not just a branded practice. They are family-run estates who respect the biodiversity of the land. Many have turned the same soils of their land for generations and either have continued the traditions of natural methods or converted anew from the harmful practices of their grandfathers. They are families with vibrantly healthy, often overgrown yet personally tended vines. They wish no harm to the life around them and promote harmony in their daily lives as well. Most of them work without pesticide or chemicals in the vineyards. Whether fully certified or not, they tend to be organically minded, and in many effects practice a biodynamic existence, closer to the ancient ways of producing . The philosophy carries into the winery and cellar as well. A common checklist would read: NO additives, NO preserving agents, NO cultured yeasts, NO filtration and often even, NO sulfites used. Most of the growers allow nature to make the with little human intervention. This produces a clear window to a total terroir expression, with climate, vintage, soils and true winemaker character easily recognizable. Each has their own intentions in the cellar, but the growers make wines they want to drink. The growers are, by nature of being small producers, often have limited bottlings. The best that show each vintage are imported, with support to new cuvées or bottlings they are currently exploring.

DOMAINE de BELLE VUE - LOIRE Not far from the Atlantic coastline, in the land of and oysters, is the eight hectares domaine of Jérôme Bretaudeau. After fifteen years of working for wineries in the region, he scraped enough tanks and barrels together to begin his own cellar. Now he is cultivating ten different varietals in diverse soils near his home. Jérôme is a large, quiet man, set on working hard to get the best he can from his domaine. He has a mind for organic practices and traditional winemaking. He has a clever approach to his cuvée selection; rather than selecting only from ‘lieu dix’ sites, he harvests by age of vine per each soil type. This way he can learn what each vine will bring to his cellar as they come to age. He replants by massale selection, to keep his clones growing in their rightful home. He knows his two best soils are hiding in the earth here: gabbrox from ancient volcanic activity (very raw in texture in the wine) and older granite/schist (for a rounder expression) are his two priorities. Jérôme is an intelligent young vigneron, learning while he builds his new domaine. DOMAINE MARCILLET - BURGUNDY Nadine and Rémi Marcillet started their 10 hectares domaine over 20 years ago. They are located in the village of Fussey bordering the Hautes-Côtes de Nuits and Hautes- Côtes de Beaune. They utilize a mixture of current and conventional technology to produce low-yield, organic wine. Their wines are matured in oak barrels and matured in their 200 years old cellar. Before starting the domaine, they both worked in the wine business. Nadine worked at the Hospices de Beaune, and Rémi’s viticultural career included a period at the Ecole de Vin in Beaune. GIOVANNI MENTI - The love affair between the Menti family and their vines began over a hundred years ago with the production of wine meant for consumption of the family. At the end of the 19th century, Giovanni Menti began to sell the wine to the public. Since then the tradition has remained strong, with Stefano taking over the reins about seven years ago. He farms his 7.5 hectares biodynamically, painstakingly caring for each individual Garganega and Durella vine. All the vines are planted on classic hilly sites in Gambellara. QUARTICELLO - EMILIA-ROMAGNA Roberto Maestri is a relatively new winemaker, but his energy and focus reveal a seasoned and natural talent. Although his family initially purchased the eight hectares property (five hectares of vines), it was Roberto who gained an instant passion and took as many roles in the field and cellar as possible. In 2006, only five years after the Quarticello farm was created, he gained a full degree as ‘vinicoltore’ and took control of production. His goal is simple: using indigenous , through natural cultivation and production, one can achieve the true expression of the land via the wine. He farms his gravelly sand-clay soils in Montecchio Emilia without use of chemicals and using only organic fertilizers. Several variants of Lambrusco grow aside Malbo Gentile and Malvasia di Candia. No international grapes have crept onto the scene, nor have any modern winemaking techniques. Roberto prefers fermentation to happen in the bottle, with only naturally occurring yeasts to retain the true voice within the wine. He is certain that by these ancient approaches to both the vineyards and the cellars, he can ensure strict authenticity through which we can drink the perfect expression of the inherent qualities of these varieties, grown in their proper home.
