Since then I have become a HUGE fan. As far as I am concerned Alderton Ham (baked with Marmalade) is the best ham in Britain bar none. We always have it at Christmas and at Easter. This year Covid scuppered our family plans, but last week when I heard that at long last my sister and her husband were able to visit us I knew that this was a perfect moment for THE ham of hams. As always, I bought a few other things that The Country Victualler supplies - delicious meaty treats! (their gourmet Scotch Eggs are wonderful). Handful of favourite herbs, chopped. Chives & Sage go great! 4 cloves. 1 tsp of mustard seeds. 6 cinnamon sticks. 1 tbs of cider vinegar. 150ml of smooth orange juice. 1 large orange, sliced. 2 large lemons, sliced. Method 20g of golden caster sugar. 1. Combine the ham, herbs, mustard seeds and vinegar together with the clarified butter and divide into 6 ramekins. 2. Press the mixture down with the back of a Method spoon till firmly packed, then top with the remaining butter 1. Heat everything except the brandy together slowly, to and chill until firm. 3. Serve with pickles and hot toast for allow all the flavours to combine. Don’t let it boil. an easy supper. 2. Add the brandy just before serving in clear heatproof tumblers, an instant nostalgia hit.
