1 Meet Our French Master Chef

EXECUTIVE SOUS CHEF MASTER CHEF PATRICK PONSATY

Master Chef Patrick Ponsaty is a fifth-generation French chef. He began his illustrious career at the age of 10, working side- by-side with his father at their family restaurant in the South of France. After formal training at Brevet des Collèges and Cuisine Classique, Ponsaty went on to apprentice in Michelin starred restaurants thoughout Europe.

After stints in Spain and New York, he moved to San Diego where he received a myriad of accolades including “Best Hotel Chef in America” by the James Beard Foundation. In March 2012, Chef Ponsaty was inducted into the prestigious Maîtres Cuisiniers de France. He is currently one of only two chefs in San Diego who holds the prestigious title of French Master Chef. After helming 1500 OCEAN, Hotel del Coronado’s fine dining restaurant, his role was elevated to an executive position, allowing the Master Chef’s creativity and skill to touch all aspects of dining at The Del.

In his spare time, Chef Patrick can be found perusing the best of the regions Farmer’s Markets. His favorite markets include Little Italy on Saturdays from 8 am – 2 pm, La Jolla Open Air Market on Sundays from 9 am – 1 pm, Leucadia Farmers’ Market on Sundays from 10 am – 2 pm and North Park Thursday Market on Thursdays from 3 – 7:30 pm.

All food and beverage orders are subject to a combined 25% (28% outdoors) taxable gratuity/service charge and 7.75% sales tax, which is subject to change.
