Sourcing from top vineyard sites, Trout is able to create wines that reflect her palate and can be appreciated now or aged over the next decade. Whether it’s conversation or dinner, these wines will undoubtedly pair well. Brook & Bull wines are hand-crafted from vine to bottle, made with small lots sourced from carefully tended vineyards. From alcohol to acid, phenolics to tannin, balance is always our goal. Our reds tend to age nicely through year eight, while whites and roses trend closer to the three to four-year mark. Brook trout, much like winemaker Ashley Trout, are native to the east coast whereas bull trout, like our nation’s best wines, thrive in the Pacific Northwest. Both thrive in the harshest of conditions, much like the best wine grapes, Brook & Bull Cellars is the confluence. Pencil shavings, flint, pear and pineapple and kiwi give our signature white a complex bouquet leading to a simultaneously voluptuous yet crisp mouthfeel and finish. Lemon spritz meets a pinch of toast and butter, rolling into Granny Smith apple spritz, landing on a food friendly finish. Aged in both newer and neutral barrels, this is the best of both Chardonnay worlds.
