It is difficult, if not impossible, to go for a walk anywhere and not see any fungi. One very common and widespread in Alberta is the oyster mushroom, Pleurotus ostreatus. Oyster are edible and a favourite among mushroom collectors. The taste of the oyster mushroom varies from very mild to very strong, sometimes sweet with a hint of anise (licorice). Puree of Leeks, Oyster Mushrooms and Cardamom Enjoy the contrast between the smooth puree of the mushrooms and the crunch of the fried leeks. The soup can be made several days in advance. Add the cream just before serving. Freshly ground cardamom adds a pleasant camphor flavour that works well with the richness of cream. 1 tbsp butter (or olive oil) 15 mL 2. Transfer soup to a blender or food processor and 4 cups leeks, cleaned and sliced 1 L puree in batches (be sure to place a dish towel on 1 tbsp garlic, minced 15 mL top of the blender and press down firmly to avoid 2 cups oyster mushroom pieces 500 mL splashing the hot liquid). Return to the pan, add (or button, crimini or cauliflower fungus) cream and stir well to mix. Bring to a boil, check salt and pepper to taste seasoning and adjust with salt and pepper.
