8 cups Field Day Vegetable Ingredients: 1 - Yellow Onion; diced 1 - Bunch of Celery; diced bulk 1 lb. - Carrots; diced 1 tbsp. - Chopped Garlic 2 cups - French Lentils (2) 28oz. can - Field Day Diced Tomatoes 2 tbsp. - Dried Thyme 1/4 cup - Field Day Balsamic Vinegar 1/8 cup - Olive oil 8 cups - Field Day Vegetable Broth

Preparation: Heat oil over medium/low heat; add . When onions appear translucent, add carrots, celery, garlic and thyme. Cook 10 min., stirring frequently. Add lentils and stir well. Cook 5 minutes. Add vinegar, tomatoes and broth; mix well. Bring mixture to a low simmer. Check carrots and lentils after 15 min.; if tender, remove soup from heat.
