Cask-Aged Gin from that marvelous Professor Cornelius Ampleforth fellow! Made by taking tiny "octave" casks and filling them with the multi-award-winning Bathtub Gin, the spirit is then aged for between three to six months before bottling. The gin gains all kinds of complexity and flavour during these months. The result is a wonderfully spicy, rich, and buttery gin.

Bathtub Old Tom Gin 42.4% £3.60

Professor Cornelius Ampleforth has been at it again, and this time he’s recreated a traditional style of gin that was very popular in 18th and 19th century England. Old Tom is a slightly sweetened gin, created by the professor following a request from The Handmade Company, which needed a delicious Old Tom gin for use in their Martinez cocktail.

Beefeater 24 45% £2.90

Made with 12 ingredients, Japanese Sencha tea, Chinese green tea and then Seville orange peel, grapefruit peel, lemon peel, juniper, coriander seed, liquorice, angelica root, almond and orris root. It is called Beefeater 24 because the botanicals are steeped in the spirit for a full 24 hours. The result is a fragrant gin with good sweetness.

Blind Tiger Cubeba Piper 47% £4.70

Blind Tiger Piper Cubeba is a beautifully strong and spiced gin. An above average ABV and the unusual use of a malted barley and cubeb pepper means Blind Tiger Piper Cubeba is a spicy, warming spirit. Based in Schiedam, Netherlands (the original home of gin where genever is still made today). Surrounded by the rich history of the drink, this is a gin steeped in history - and juniper! Bobby's is a unique blend of Indonesian spice and traditional botanicals. Spicy and fragrant on the nose with a fresh burst of citrus and herbs at first sip and a slight hum of pepper.

Made on the Isle of Islay in the Hebrides of Scotland (usually more famous for ) the Botanist have made the first and only Islay Dry Gin. Botanist uses a combination of 9 classic gin botanicals, including orris root, coriander seed, cassia bark and juniper, plus 22 further locally grown and handpicked botanicals such a sweet chamomile, creeping thistle, nettles, and moss, all foraged from the harsh hills, peat bogs and cliffs and beaches of Islay.

A spiced gin from Belgium's Buss No 509. White Rain is made using botanicals including liquorice, coriander, angelica, vanilla and cardamom, along with herbaceousness from marjoram.

Using a botanical selection based on the limon mandarino, a hybrid between a mandarin orange and a lemon, they have created a wonderful, citrus-forward gin and given it the rather regal name, Treasure. After , it is aged in rum barrels for 35 weeks to enhance and round out the flavours.

Forest Gin is an exceptional, award winning and local spirit which is distilled in small batches at their distillery next to the glorious Macclesfield Forest. They then take a pestle and mortar to bundles of botanicals which they forage from the Macclesfield Forest when they can - this includes wild bilberries, gorse flowers, raspberries, and local moss, among others.

Langtons gin uses water filtered through ancient slate beneath the mountain of Skiddaw in the Lake District. Utilising Lakeland ingredients such as local oak bark blend where possible, a total of 11 botanicals are used with distillation taking place at Greenall's in Warrington.

The Original Manchester Gin 40% £3.40

Made in Manchester using their Manchester gin, which in turn is made with a distilled honey base, this gin is produced at the brilliantly named 'Zymurgorium' meadery, brewery and distillery. The honey- base makes Manchester Gin slightly sweet, especially on the palate, with floral notes, that develop into light spice. There is a finishing herbal touch that lingers on the palate.

Malfy 41% £2.90

Malfy Gin is an Italian gin is made using a selection of six botanicals, as well as an infusion of Italian coastal lemons, including some from the Amalfi coast! Sharp and

dry on the nose with an abundance of fresh lemon and a hint of ginger, Malfy softens on the palate becoming lemon sorbet-like.

Martin Miller’s 40% £2.90

This light and delicate gin is distilled in pot stills and shipped to Iceland, where it is mixed with Icelandic spring water. It is flavoured with Tuscan juniper, cassia bark, angelica, Florentine orris, coriander, Seville citrus peel, nutmeg, cinnamon and liquorice root.

Monkey 47 Dry Gin 47% £5.50

An unusual gin from the Black Forest in Germany, Monkey 47 contains a unique ingredient. Cranberries! The 47 comes from the number of botanicals and the fact it's bottled at a healthy 47%. In 2013 it won the World Spirits Award Gold in the Gin category and Gold for best in class for the Gin Worldwide at the International Wine and Spirits Competition London.

Nordes is a Galician gin inspired by the eponymous fresh northerly Atlantic wind. Made using from Albarino grapes, the botanicals include juniper, ginger, hibiscus and liquorice, resulting in a unique and intriguing gin.

Opihr 40% £3.00

A London Dry Gin made with botanicals from along the traditional spice route that led back to the UK. Indonesian Cubeb berries, Indian black pepper and Moroccan coriander are all used to give it a spicy and aromatic flavour.

Plymouth 42.4% £3.60

A style of Gin all on its own, Plymouth gin can only be made in Plymouth. This is a pot still gin, with a strong well rounded and balanced flavour. Works well in a G&T but even better in a martini.

Plymouth Navy Strength 57% £4.10

A high strength Plymouth gin, this is a rich and flavourful gin supplied to the Royal Navy for nearly 200 years.

Portobello Road No. 171 Gin 42% £2.90

This gin was released by the award-wining Notting Hill , Portobello Star, home of the Ginsitute. It's an old-style London Dry Gin, containing traditional botanicals and spices, that harks back to the gins of yesteryear.

Rock Rose 41.5% £3.90

Rock Rose is made by Dunnet Bay Distillers in the very north of Scotland. Produced using some local, but unusual, botanicals including rose root, sea buckthorn, rowan berries and blueberries, this is fresh and zesty with berry notes.

Sacred Gin 40% £3.20

Sacred Gin is a handmade gin produced in small batches in London by Ian Hart. It is made with citrus, juniper, cardamom, nutmeg and Hougari frankincense as well as 7 other botanicals. In 2009 it was the Overall Winner at Ginmasters, with a score of 98 points out of a possible 100.

Sacred Christmas Pudding 40% £3.40

This gin is certainly unique – it's made by distilling Christmas puddings! The puds are steamed for eight hours, macerated in grain spirit with juniper berries and then redistilled. All the flavour of the traditional dessert without the stodge. Best served directly from the freezer after a meal.

Silent Pool 43% £3.60

Silent Pool Gin is named for the eponymous lake near to where it is produced in Surrey. Juniper-driven with notes of lavender, chamomile and citrus, there is also some local honey in the mix.

Sir Robin of Locksley 40.5% £3.85

A thoroughly Yorkshire gin, Sir Robin of Locksley is made in Sheffield by Locksley Distilling Co and named for one of its local heroes. Their small batch, hand raised gin is a smooth and delicious affair. They lovingly blend traditional botanicals with more delicate infusions of elderflower, dandelion and pink grapefruit.

Tanqueray No. Ten 47.3% £3.40

Created especially for gin martinis, Tanqueray Ten is an exceptionally smooth, well- rounded and quadruply distilled gin. Established in 1830, Tanqueray Gin is a stalwart of the British spirit industry. One of Tanqueray's more modern offerings Tanqueray Ten is deliciously smooth. It has pink grapefruit and chamomile on the nose, with juniper, lemon citrus and pepper on the palate.

Tanqueray Rangpur 41.3% £2.90

Taking inspiration from Britain and India’s shared gin history, Tanqueray Rangpur plays heavily on its namesake limes. Tanqueray Rangpur is a brilliantly clear, bright citrus gin. Full of lime zest and juniper, there are subtle peppery ginger notes that work fantastically alongside the citrus.

Thomas Dakin 42% £3.70

Thomas Dakin Gin is a Manchester creation, named for the forefather of quality, British gin. Thomas Dakin is a deliciously traditional, juniper forward gin. The sweet orange and citrus notes found on the palate contrast nicely with the smooth and savoury finish created by the cubebs and red cole, a kind of horseradish.

Two Birds London Dry Gin 47% £3.20

Using a still he designed and built himself Mark Gamble creates this big refreshing London dry using juniper and 4 other 'countryside' botanicals as well as natural spring water from Charnwood Forest in Leicestershire. It was awarded the Gold Medal (UK Craft Gin of the Year) at the Craft Gin Awards 2013

Ungava 43.1% £3.20

Ungava gin is a distinctly yellow and distinctly Canadian spirit with unusual botanicals including; cloudberries, crowberries, and Labrador tea. A fantastically dry gin, sharper and with more pine flavour than most giving in to layers of tart berries and semi-sweet floral flavours.

Warner Edwards Harrington Dry Gin 44% £3.55

Produced on the Falls Farm in Northamptonshire by Warner Edwards, Harrington Dry is a delicious gin. It's based on barley spirit which is flavoured with eleven botanicals sourced from farms in Wales and England. These include juniper, elderflower, and coriander.

West Winds Cutglass 50% £4.75

Australia's most awarded gin, The Cutlass is a beautifully aromatic gin with an Australian character. The Cutlass combines traditional juniper alongside some uniquely Australian elements, including cinnamon myrtle, lemon myrtle and Australian bush tomato.

William Chase Elegant Crisp 48% £3.65

Distilled from their very own apples, Williams Chase Elegant Crisp is a rather unique gin. There are very fresh aromas of juniper, citrus fruit and spices on the nose. This is a particularly full-bodied and fruity gin, full of warm spices and earthy undertones; the apple base comes through clearly but is never overpowering.

Whitely Neil London Dry Gin 42% £2.90

Superb quality, soft London Dry Gin, Whitley Neill is made by an independent distillery with 4 generations of family heritage. They base this on African botanicals, including the Baobab Tree and Physalis.

Fruit Gin

Edinburgh Gin Raspberry 20% £2.90

A tasty Raspberry-flavoured gin made in Edinburgh using Scottish Juniper, and other botanicals, and an infusion of delicious, crisp Scottish raspberries. Very good stuff.

William Chase Sloe and Mulberry 29% £3.30

Chase allow big ol' bunches of sloe berries to marinate in a specially created gin for eight months before adding some delicious mulberries to the mix for two months!

Buss 509 Grapefruit 40% £4.70

Packed with citrus notes, this Buss No.509 Gin features red Californian grapefruit as a botanical, along with juniper, coriander, liquorice, angelica, vanilla, cardamom, iris, orange, and lemon. Bright and flavoursome, this Belgian gin would make for a fine aperitif.

Warner Edwards Elderflower 40% £3.10

Combining the complex flavours of the Harrington Dry Gin with the sweet bouquet of elderflower makes this a wonderful creation a perfect accompaniment for those long lazy summer days.

William Chase Seville Orange 40% £3.70

Chase are based in Herefordshire and produce a variety of gins and using a spirit distilled from apples. Unsurprisingly this gin has a fairly hefty whack of zesty Seville Oranges thanks to a re-distillation through the zest of these citrus fruits.

Vodka

Finlandia 40% £2.90

Our House pour. A very good vodka from Finland, Finlandia is a great premium vodka, made with glacial spring water.

Stolichnaya 40% £2.90

A classic Russian vodka; Stolichnaya is filtered three times, once with quartz, then charcoal and then quartz again for a pure but original flavour profile.

Zubrowska 42.4% £3.00

Zubrowska is one of the most famous Polish vodkas out there, with its famous stem of Bison Grass in the bottle.

Chase Rhubarb 42.4% £3.60

They make this gorgeous stuff by cooking the rhubarb, marinating it in their vodka, distilling this mixture before adding yet more macerated rhubarb and filtering it.

Sipsmith Damson 42.4% £3.60

This is the 2011 limited edition damson vodka from London distillers Sipsmith. It boasts a delicious bitter sweet flavour that makes it very much suitable for or indeed to drink by itself.

Rum

Diplomatico Añejo 40% £2.90

A supple, medium bodied dark rum from Diplomático, this Añejo is a blend of both continuous and pot still rums and is aged for around 4 years.

Rumbullion 42.6% £3.40

A sure-fire hit from Professor Cornelius Ampleforth, Rumbullion! is a cockle- warming spiced concoction, based on the kind of rich, full-bodied rums the seafaring fraternity would have enjoyed centuries ago.

El Dorado 3 Year Old White Rum 40% £3.40

A more recent part of the El Dorado range, this is aged in bourbon barrels, making this a great mixing rum, though not a bad sipping spirit either!

Whiskey

Wild Turkey 40.5% £2.80

Our house whiskey. An 81 proof (40.5%ABV) bourbon crafted by Wild Turkey associate distiller Eddie Russell, son of master distiller Jimmy. It's a high rye mash matured in heavily charred casks for big flavour at a more approachable ABV than the 101.

Balvenie Doublewood 40% £4.20

One of the classic after-dinner malts, Balvenie Doublewood's extra complexity and richness are a result of a second maturation in fresh casks. Great stuff.

Penderyn 46% £2.90

Penderyn is a distilled once in a unique Faraday copper still with an added purifier and rectification column and finished in Madeira casks for extra smoothness. Launched in 2004, Penderyn has built on its early promise and really carved a niche for itself.

Port Charlotte Scottish Barley 50% £4.80

Master distiller Jim McEwan specially chose the casks that create the Port Charlotte Scottish Barley, which highlight the elegance within this heavily peated single malt. Made with 100% Scottish barley and matured in the village of Port Charlotte.

Bains Cape Mountain 43% £3.50

South African single grain whisky. Bain's Cape Mountain whisky is produced in column stills, matured in first fill bourbon casks for five years and named after the chap who built the first roads in Wellington.

Yamazaki 12 43% £7.00

This 12 year old from Yamazaki first came onto the market in 1984 and was the first seriously marketed Japanese single malt whisky.

Woodford Reserve Kentucky Bourbon 43.2% £3.30

A premium small batch bourbon. Clean, brilliant honey amber with the taste of vanilla and tobacco spice with complex citrus, cinnamon and caramel notes. Makes a perfect Smoked Old Fashioned!

Hibiki Japanese Harmony is a blend of Japanese malt and grain from Yamazaki, Hakushu and Chita. Presented in the brand's trademark 24-faceted bottle representing the Japanese seasons, this is light, approachable and moreish with enticing notes of orange peel and white chocolate.

Nikka From the Barrel 51.4% £5.60

Nikka from the Barrel is big-boned and bursting with character. Not averse to a drop of water, either. A real star, winning top prize in its category at the World Whisky Awards in 2007 and 2010.

Springbank 10 Year Old 46% £4.20

Blended from a mixture of bourbon and sherry casks, the light colour of this malt belies the richness of its character. The palate shows touches of smoke, vanilla essence, nutmeg, cinnamon and the salty tang characteristic of the distillery. Picked up the top prize in its category at the World Whiskies Awards 2014.
