WC Fields would start the day with two double martinis, enjoyed either side of his breakfast. He drank about two quarts of gin a day. Every Gin brand has its own unique fragrance; most consumers have probably only tasted a small number of the gin brands available. In ours there are more than 60 different Gin brands, from 9 different countries; offering a wide spectrum of fragrances, using different botanicals and infusion methods in all shapes and sizes. Gin is distilled differently. Premium Gins are distilled 3 to 5 times to remove impurities; each brand has a unique formula that provides its special characteristics. The favourite drink of former President Gerald Ford is Gin and Tonic. Gin is the only alcohol liquor that was first developed as a medicine remedy before it became popular as a social drink. “Mother’s Ruin” a term that came from British soldiers taste for Gin when home on leave from the World War II, and the maternal state it induced in the women who shared their off-duty conviviality. William of Orange prohibited the importing of alcohol to England in the early 18th Century encouraging the production and consumption of English Gin. The excessive consumption that followed gave rise to the name Gin Craze. -

At Milk & Honey we have a passion for making the highest quality drinks using the best ingredi- ents, and the finest, often painstaking, methods. Every afternoon, we squeeze oranges, lemons, limes and pineapples by hand. We press our own ginger to make our house ginger beer. We don’t use any juice or extract that we haven’t made ourselves (hence no cranberry juice), because the drinks taste fresher and better that way. We put most of our glassware and all of our mixing glasses in freezers set to -30C to keep drinks cold during the delicate preparation phase. We count the times we shake or stir to ensure the perfect mix without excessive dilution. If you’re in The Red Room, you’ll be served drinks containing jagged wedges of ice. We cut these by hand with an ice pick from a twice- frozen block of ice made from mineral water. Ice like this is denser, colder and clearer, and chills your drink perfectly without diluting it too much. We have also put together a collection of great value wines, champagnes, whiskies, armagnacs and other digestifs. We hunt down rare bottles at auction and we go to Champagne, the South of France, Australia, New Zealand and South Africa to import our own stuff direct at a better price. It takes a few minutes to mix a great drink. Legal liquor was returned to the United States, with President Roosevelt calling on the people to see that “this return of individual freedom shall not be accompanied by the repugnant conditions that obtained prior to the adoption of the Eighteenth Amendment and those that have existed since its adoption.” Prohibition of alcoholic beverages as a national policy ended at 5:321/2 P.M., Eastern Standard Time, when Utah, the last of the thirty-six States furnished by vote of its convention the constitutional majority for rati- fication of the Twenty-first Amendment. The new amendment repealed the Eighteenth, and with the demise of the latter went the Volstead Act which for more than a decade held legal drinks in America to less than one-half of 1 percent of alcohol and the enforcement of which cost more than 150 lives and billions in money. ICE GLEN VODKA CAPE CODDER 2 oz Ice Glen Vodka “Clear. Mild honeydew and cream aromas. A supple entry 4 oz Cranberry juice leads to a dryish medium body with hints of eucalyptus ½ oz Fresh lime juice honey. Finishes with a peppery, light minty fade. Excellent.“ Lime wedge – Beverage Testing Institute Shake all ingredients with ice and strain into a highball glass with fresh APEROL SMASH ice. Garnish with a lime wedge. 1 oz Ice Glen Vodka CUCUMBER FIZZ ½ oz Fresh squeezed lime juice 2 slices of thickly cut cucumber ½ oz Simple Syrup 1½ oz Ice Glen Vodka 1 oz Aperol ½ oz St. Germain 5 Grapes ½ oz lemon juice Soda water ½ oz simple syrup* Muddle grapes in a Collins glass. Shake remaining ingredients with Soda water ice and strain into a into the Collins glass with fresh ice. Top with soda Cucumber slice, mint or lemon water (or try lemon/lime seltzer). Muddle cucumber and lemon. Shake all ingredients with ice and strain THE BARYSHNIKOV into a Collins glass with fresh ice. Top with soda water.
