Travel with a COLD cake, but let it come to room temperature to serve! To get clean slices, dip your knife in water after each slice (preferably HOT!) and wipe clean to slice again. Never refrigerate a cut cake. It will dry out. It will be fine on the counter for 2 DAYS, covered. A cake will wilt if left in an 80° environment, and melt at 90°. In extreme heat, refrigerate cake until ready to serve.
