Karim1* , Farah Adibah Che Ishak1, Mohd Mursyid Arsyad2, Supatra Karnjamapratum3 and Jiraporn Sirison3 Abstract The Malaysia’s cultural heritage is authentic, unique and colourful with various local cuisines of different races and cultures. It is mainly originated from the Malay culture being the largest ethnic group in the country. The Malays themselves have contributed to many local cuisines ranging from appetiser, soup, main course and dessert. However, some Malay heritage foods have almost been forgotten and jeopardized in quality. This is especially happening to the Malay sweets or desserts which have gradually become less appealing to the younger generations. They are not even familiar with Malay foods, let alone consuming them. Among the popular Malay heritage foods in Malaysia are lemang, ketupat, rendang, wajik and dodol. Dodol specifically has been listed as one of the endangered heritage foods in Malaysia. Preserving the Malay cuisines is part of sustaining the Malay culture and this should begin with a great amount of knowledge and understanding about any elements within the culture itself. This article highlights a nostalgic and evergreen Malay’s traditional sweet, known by the locals as dodol by discussing its history, different types and names of dodol, as well as the recipes, preparation, cooking methods and packaging. -

Volume XLV, No.3, November 2010, pp 38-44 Pengaruh Penambahan Gula dan Jahe Terhadap Mutu Produk Makanan Tradisional Wajik Jahe PENGARUH PENAMBAHAN GULA DAN JAHE TERHADAP MUTU PRODUK MAKANAN TRADISIONAL WAJIK JAHE ( The Effect Addition of Sugar and Ginger on Quality Traditional Food of Ginger Wajik) Oleh : Dinarwi * ) ABSTRAK Penelitian pengaruh penambahan gula dan jahe terhadap mutu produk makanan tradisional wajik jahe telah dilakukan. Penelitian ini dilakukan dengan Rancangan Acak Lengkap secara faktorial yang terdiri atas dua faktor dan tiga kali ulangan yaitu faktor A (perbandingan gula merah dan gula putih) terdiri dari A1(40 % : 10 % ) dan A2 (30% : 20 %), Faktor B (jumlah penambahan jahe) terdiri dari B1 = 10 %, B2 = 15 % dan B3= 20 %. Dari hasil penelitian uji organoleptik yang memberikan skor tertinggi adalah pada pemakaian gula merah dan gula putih (40 % : 10 %) dan jumlah jahe 15 %. Dari uji kimia dan uji mikrobiologi diperoleh hasil : kadar air 15,02 %, kadar gula 65,2 %, kadar lemak 1,32 % , protein 2,36 % , karbohidrat 52,01 %, ALT 9,2 x 102koloni/g. '- Kata kunci : gula, jahe , makanan tradisional ~ ABSTRACT The research of the effect of addition of sugar and ginger on quality of traditional food products of wajik ginger has conducted. This research was conducted by Completely Randomized Design in factorial which consist of two factors and three replications of factor A (ratio of brown sugar and white sugar) consists of A1 ( 40% : 10%) and A2 ( 30% : 20% ), FactorS (number of the addition of ginger) comprises from S1 = 10%, S2 = 15% and S3 ='20%. From the sensory test results' that give the highest score is on the use of brown sugar and white sugar ( 40% : 10%) and 15% the amount of ginger. -

Prosiding PKM-CSR, Vol. 3 (2020) e-ISSN: 2655-3570 Peran Informasi Pemasaran pada Usaha Wajik Tape Melayu Provinsi Riau Sri Maryanti1 ,Nining Sudiar 2, Afred Suci 3, Hardi4 1,2,3,4 Universitas Lancang Kuning E-mail: [email protected] Abstrak Wajik Tape Melayu merupakan salah satu usaha kecil menengah yang berdiri sejak tahun 2008. Pada awalnya hasil produksi wajik hanya dipasarkan di sekitar Kota Pekanbaru. Sejak tahun 2011, pemasaran produk Wajik Tape Melayu telah merambah ke luar kota, termasuk luar provinsi. Melihat kondisi tersebut penulis tertarik untuk mengkaji tentang peran informasi pemasaran pada usaha Wajik Tape Melayu. Hal ini dilakukan selain untuk mengembangkan usaha masyarakat dan untuk turut serta mengembangkan produk unggulan daerah khas provinsi Riau. Metode yang digunakan adalah kepustakaan atau studi literatur. Hasil penelitian menunjukan bahwa keberadaan dan pemanfaatan informasi pemasaran dapat dilakukan melalui beberapa langkah yaitu mengindentifikasi kebutuhan informasi, mengembangkan informasi, melakukan analisis informasi, pendistribusian dan penggunaan informasi. Dapat disimpulkan bahwa informasi pemasaran memiliki peranan yang sangat penting dalam usaha Wajik Tape Melayu. Beberapa faktor yang mempengaruhi peranan informasi tersebut adalah adanya tekanan persaingan, pertumbuhan pasar, usaha untuk meminimalisir kesalahan, dan meningkatnya harapan konsumen. Informasi penting yang dibutuhkan dalam pengembangan usaha Wajik Tape Melayu antara lain informasi terkait situasi persaingan, kondisi perekonomian, peraturan perundang-undangan, dan kondisi internal perusahaan. Hal ini terbukti pada Target Kemenparekraf membidik 9 Juta wisatawan yang berkunjung ke Indonesia (Tourism Promotion Board Presenting The Wonders, 30 Mei 2013-15.00, sumber http://www.budpar.go.id). Jumlah wisatawan yang bekunjung ke Indonesia semakin meningkat dari tahun ke tahun dan ini berpengaruh besar bagi devisa Negara. Industri Pariwisata memberi andil dalam pembangunan social dan ekonomi, baik itu di Negara maju maupun Negara berkembang. All Sarkawi followers are Islam; however their neighborhood community called them Sarkawi followers, why? It is because they have different faith, which is faith in forbidden to eat goat meat and penance for those being death. Forbidden of eating goat meat caused by belief that come up from the story told by Sarkawi and penance is performed by ritual at the center (house of Sarkawi leader). By the ritual, spirit of the deaths will be admitted by the almighty. Key Words: Religion, Sarkawi I. PENDAHULUAN Di Indonesia terdapat enam agama yang diakui oleh pemerintah. Enam agama tersebut yaitu : Islam, Katolik, Kristen Protestan, Hindu, Budha, dan yang terakhir adalah agama Konghucu. Disamping itu juga terdapat berbagai kepercayaan. Masing- masing penganut agama dan kepercayaan itu mempuayai keyakinan tentang sesuatu yang dianggap paling berkuasa. 0 leh karena itu manusia akan tunduk kepadanya dan bahkan mempunyai rasa takut. U ntuk itu manusia memberikan sesuatu seperti sesaji dengan harapan agar tidak diganggu, di tolong dan lain sebagainya, sehingga menjadi tradisi yang dilakukan secara turun temurun, Kepercayaan-kepercayan itu masih ada karena di Jawa telah ada berbagai kepercayaan sebelum adanya agama-agama yang diakui oleh pemerintah. Demikian pula agama Hindu dan Budha yang telah lebih dahulu dianut oleh penduduk J awa sebelum kedatangan Islam dan Kristen. Di kabupaten Brebes Jawa Tengah terdapat sebuah aliran keoercayaan yang disebutAgama Sarkawi. Untuk itu peneliti inginmengetahui apa dan bagaimanakah - Agama Sarkawi itu? Uraian berikut meliputi kepercayaan dan upacara-upacara yang di lakukan oleh pemelukAgama Sarkawi. -
