Ingredients for the actual stuffing ¾ Tea cups of Black Gram ( Urad Dal) 2 tablespoons of Oil Salt to taste

For Deep Frying Oil or Ghee Instructions: Preparing the dough

1. Take a mixing bowl. 2. Add 2 cups of Maida ( Plain Flour) 3. Add 2 teaspoons of hot oil ( microwave for 10 sec) 4. Add the Nigella Seeds. 5. Add 2 pinches of Salt. 6. Add some water and knead it into a stiff dough. 7.Leave this dough aside for settling for 20 minutes.

Preparing the Masala 1. Take the dry roasted Coriander seeds, Dry Roasted Cumin Seeds, Saung, Peppercorns, red chillies and grind them into a fine powder.

How to make the stuffing. 1. Soak the Urad Dal in water for 4 hours. 2. Drain the water once done. 3. Grind this Urad Dal in a coarse paste in a grinder , use little bit of water as needed. 4. Take this lump of Urad Dal paste and fry it in the oil. 5. Take out of the frying pan. 6. Let it cool 7. Add the Masala Powder prepared above and add the salt as well. 8. Mix well.

Next Step 1. Now take the dough and make small balls. 2. Roll the balls into a roud shape using a pin and roller. 3. Put some stuffing in the middle. 4. Fold the edges to cover the stuffing completely and roll out again into small pooris. 5. Deep fry the poories in hot oil.

Serve with yoghurt or any vegeterial dish.

500 gm. Urad Dal or black gram dal, skinless 375 gm. petha or ash gourd.

If this is not available, use same amount of cauliflower flowerets or Zuchini , paste 2 Tablespoons Green Chillies 10 finely chopped Finely Chopped coriander 1 Cup Coarsely Ground black seeds 1 teaspoon Red Chilly powder 1 tablespoon Black Peper coarsely ground 2 tablespoons Saunf ( Seeds) 2 tablespoons 20 - coarsely grounded Jeera(Cumin Seeds) 2 tablespoons 1 tsp. mace powder 2 pinches of , freshly grated 1 teaspoon of asafetida or hing powder 1/2 teaspon of. powder Instructions: 1. Coarsely grind urad dal in a dry Grinder. 2. Soak in enough water to cover 1/2 inch above the dal and leave for a couple of hours. It will absorb water and become like a thick batter. 3 Add the powder in and mix well. 4. Leave overnight in a warm place, to let it rise a little. 5. Clean, wash and gratech the petha or cauliflower and squeeze the water out and keep aside. 6. Grind ginger, green chillies and coriander leaves, all together, in a food processor. 7. Take a big mixing bowl and add the Dal in. 8. Add all the other ingredients. 9. Beat vigorousl and mix well, add water as needed to fix the consistency to a dropping consistency. 10. Take 2 trays and put the greased paper or baking paper in the tray . 11. Now put small blobs the size of Pingpong Balls on the tray. 12. Leave them in the hot sun, until dry.

Store in airtight containers or plastic bags. Freezer is good, if you have a large one.

( The more air you have in your mixture the better it is. The trapped air is responsible for making the Wadis light. )

Note: They are not edible straight away and they are used as an ingredient in a curry. You can cook up a dish with Peas and Wadiyan , once you have the Wadis completely dried. Normall one or two Wadis are broken into small pieces and sauted with some oil and then add the and peas and cook like a curry..

Let us demystify this for you.

Baking soda and Baking Powder are both leaving agents. The product carbon dioxide and make the cooked food 'rise' like cakes.

Baking soda

Baking Soda is pure Sodium Bicarbonate. When it combines with some acidic ingredient and moisture it results in a chemical reaction which produces Carbon Dioxide gas bubbles as soon as you mix it with the other ingredients, therefore you need to cook your dish as soon as you add the baking soda otherwise it will tend to go flat, like coke left open for long.

Baking Powder

Baking powder contains baking soda(sodium bicarbonate) plus some acidifying agent (cream of tartar), and a drying agent (usually starch).

Baking powder is available as single-acting baking powder and as double-acting baking powder. Single-acting powders are activated by moisture, so you must bake recipes which include this product immediately after mixing. Double-acting powders react in two phases and can stand for a while before baking. With double-acting powder, some gas is released at room temperature when the powder is added to dough, but the majority of the gas is released after the temperature of the dough increases in the oven.

How to determine when to use the Baking Soda or the Baking Powder in your recipe? When you use the Baking Soda you would need some acidic ingredient to create the reaction ( eg. yoghurt, butter milk etc). otherwise it will result in a bitter taste.

Baking Powder is a premix which already has a acidic medium , so the end result will be a neutral effect in terms of the taste.

In cakes and biscuits you normally do not use any acidic ingredient, therefore you need to use the Baking Powder so that it can cause the rising action on its own.

Can I substitute Baking Powder in place of Baking Soda? - YES

As already said the Baking Powder already has the Baking Soda in it, though lesser quantity then pure baking soda. Therefore you can use baking powder in place of baking soda but you would need more quantity of Baking Powder to achieve the equivalent results.

Can I substitute Baking Soda in place of Baking Powder? - NO

Normally no - as already said you would need an acidic medium to cause the reaction with the Baking Soda. If you are making a cake and if you want to add baking soda in place of the baking powder, it will not work well as it will not have any acidic medium to react with. So the cake will not rise.

Clean soap scum, mildew, and grime from bathtub, tile, and shower curtains. Simply wipe the surface with Vinegar and rinse with water. Deodorize the air. Vinegar is a natural air freshener when sprayed in a room.

Relieve itching. Use a cotton ball to dab mosquito and other bug bites with Vinegar straight from the bottle.

Clean lime deposits and calcium sludge from an automatic drip coffee maker. Once a month fill the reservoir with White Vinegar and run through the brew cycle. Rinse thoroughly with two cycles of cold water.

Soothe sunburn pain. Apply undiluted Vinegar to the burn.

Prolong the life of flowers in a vase. Add two tablespoons of White Vinegar plus three tablespoons of sugarper quart of warm water. Stems should be in three to four inches of water.

Clean windows. Use undiluted Vinegar in a spray bottle. Dry with a soft cloth.

Eliminate unpleasant cooking odors in the kitchen. Boil one tablespoon of White Vinegar with one cup of water.

Remove wallpaper. Mix equal parts Vinegar and hot water. Use a paint roller to wet the paper thoroughly with the mixture. Repeat. Paper should peal off in sheets.

Eliminate animal urine stains from carpet. Blot up urine, flush several times with lukewarm water, then apply a mixture of equal parts White Vinegar and cool water. Blot up, rinse, and let dry.

Relieve a cold. Mix one-quarter cup Apple Cider Vinegar with one-quarter cup honey. Take one tablespoon six to eight times daily.

Deodorize a stale lunch box. Soak a paper napkin in Vinegar and leave it inside the closed lunch box overnight.

Prevent soapy film on glassware. Place a cup of White Vinegar on the bottom rack of your dishwasher, run for five minutes, then run though the full cycle. A cup of white vinegar run through the entire cycle once a month will also reduce soap scum on the inner workings.

Unclog a shower head. Unscrew the shower head, remove the rubber washer, place the head in a pot filled with equal parts Vinegar and water, bring to a boil, then simmer for five minutes.

Retard patching plaster from drying. Add one tablespoon white vinegar to the water when mixing plaster to slow the drying time.
