Dulce de Leche – Latin America
(Sweet Caramelized Milk)
Note – this can also be made by cooking milk with sugar and baking soda very slowly to
make a caramelized mixture similar to what is described here – the method used here is
very simple and results in a thick and creamy caramel mixture
Cooking Method Dulce de Leche – Boiling
Yield – 1 Can Dulce de Leche for Each Cooked
Ingredients:
2 Cans of Sweetened Condensed Milk Unopened (or however many you want to make)
Ample Water
Procedure:
1. Place a large pot on the stove and fill it 80% full of water (there is a risk of
causing a can to explode if the can does not have water completely surrounding it
while you cook it and since you cook it for hours you want to make sure that you
use lots of water and that you check it occasionally to make sure it is still full)
2. Bring the large pot of water to a rolling boil
3. Add unopened cans of sweetened condensed milk to the pot and cook for 3.5 – 4
hours at a rolling boil – Adding more water as it cooks to keep the cans well
covered with water.
4. Once the cans have cooked in the boiling water for the allotted time turn off the
heat and allow the cans to cool by letting them sit in the cooling water for an hour
or so before taking them out of the pot. 5. Once the cans have been removed from the pot they can be stored until ready to
use and then opened for use.
