Catalan participation at Worlds of Flavor

Catalonia, the land of tradition that offer the best opportunities for the gourmet’s world has a long gastronomic tradition and a powerful food industry making it a world leader in the field of food and eating. Thanks to the entrepreneurship of our business fabric, our ability to attract multinationals and the international re- cognition of Catalan produce and cuisine, the food industry has become a major engine of our economy. The food industry has its own specific weight in the industrial policy promoted by the Government of Catalonia. The sector accounts for almost 20% of our gross domestic product, employs nearly 18% of the working population, invoices more than 25,000 million euros and has a fabric of more than 3,700 businesses con- sisting both of traditional and family companies as well as large foreign groups. Our commitment to innovation and internationalization is one of the foundations on which the Catalan food industry is built. Along with the wealth and diversity of our produce and products and the wide range of internationally renowned restaurants and chefs, Catalonia has positioned itself as an international bench- mark for gastronomy. Catalonia’s recognition as European Region of Gastronomy 2016 by the European Region of Gastronomy Platform is another example of the important work that has been carried out. The significant presence this year of Catalonia at the Worlds of Flavor Conferen- ce, the global forum of reference in the field of gastronomy, is another step in the process of opening and international recognition of the Catalan food sector. The Government of Catalonia is participating at this conference as the main sponsor of the event and promoting the presence of two renowned Catalan chefs, eight Catalan companies and seven Catalan listed in this catalogue. The che- fs will be participating in three seminars to introduce culinary traditions and new techniques in addition to the various products exhibited by the companies at the stand of the Government of Catalonia in the Marketplace. I hope that attending this Congress will prove beneficial to us all and will contri- bute to making us known and positioning our products as well as showcasing the talent of .

1. One of the biggest food clusters in Europe.

Over 3,400 food industry companies in Catalonia constitute one of Eu- rope’s largest food clusters, dominated by SME’s and some large Catalan firms and multinationals such as Danone, Cargill or Nestlé.

Furthermore, Alimentaria, one of the world’s most important food & drink trade fairs, is held in , as well as the leading packaging fair Hispack and the Bta., the food industry equipment & technology fair.

2. Catalonia’s most important industry

With 19.6% of the industrial GDP, the food & drink sector is Catalonia’s most important industry, employing 17.6%of the workforce, and generating a turnover of over €24b and having close links to other sectors. It is dominated firstly by the meat industry with a market share of 34.9%, followed by the ani- mal feed industry with 11.8%. and represent the most produced and sold beverages.

3. A dynamic gourmet ecosystem Gastronomy is big in Catalonia with 50 restaurants having Michelin stars, thanks to a dynamic blend of tradition and innovation. The gourmet food sector is growing rapidly with consumers searching for unique, quality products. Ferran and Albert Adrià, the Roca Brothers or Carme Rus- calleda, to name just a few, put Catalonia on the worldwide culinary map. 4. Innovative A number of significant research centres such as IRTA, CTNS, Alicia, among others, ensure that Catalonia stays ahead in food innovation.

This dynamic gourmet ecosystem has a direct influence in Catalonia on new trends and innovation in the sector, with initiatives breaking ground in new food & drink areas, such as snackification, organic and functional foods and new technologies applied to the food industry in areas beyond e-commerce, such as tracking apps and the sharing economy.

5. International appeal The Catalan food & drink sector is dynamic and with definite international commitment.

With €24,627m in exports, and a €6,401.16m positive trade balance in 2014, the Catalan food industry concentrates around 29% of Spanish total food exports and is home to approximately 1/5 of the regularly exporting companies of the Spanish food sector.

It also concentrates 49% of the Spanish food & drink industrial investment abroad and 41% of the foreign investment in the Spanish food & drink indus- try between 2009 and July 2015. The following three sectors dominate 59.5% of total food & drink sales:

Meat, pork above all The Innovacc Meat Cluster is made up of 64 companies (49 of which are SMEs) and 17 institutions. Other clusters are FoodService, Food Packaging a & Machinery, Barcelona Food Cluster, Innovi – Wine & Cava, Ains Nutrition & Health, Aquiculture and Gourmet.

Drinks, with wine dominating the sector There are 12 DOs (Guarantee of Origin), producing a varied and versatile range of . Major international exporters are companies such as Torres in wine and Codorniu and Freixenet in cava.

Animal feed, serving the huge local market but also exporting Catalonia produces 4.3% of the EU compound feed production and 20% of Catalan feed production is exported. This important sector is represented by the ASFAC, which brings together the most important Catalan feed producers. NEW TRENDS IN CATALONIA

Functional, gourmet and healthier foods

The most developed allergen-free food industry in Europe. Further- more, organic food is an emerging market in Spain and Catalonia. Spain, in general, is one of the main exporters in Europe and Catalo- nia itself has had its own certifying agency, the CCPAE, since 1994. There are 2,724 ecological food production businesses in Catalonia and over 120,000 ha. of land devoted to organic food production.

Snackification

Changes in life styles and consumption patterns create a demand for easy to consume food, with quality experiences and often connected to health trends, but also there is a drive for commodity and flexibility. An example of a local company innovating in this area is the Catalan snack company Frit Ravich, producing new product lines in line with current tendencies and investing in automated production methods.

New Technologies applied to the food industry

IT is being applied to the Food & Drink sector aimed at simplifying the shopping process, helping diet planning and catering for special needs or sharing economy initiatives. New trends are, for example virtual shopping walls, mobile in-store check-outs, smart fridges, among others. One Catalan company leading the field in the area of food ecommerce is the online super- market Ulabox. Other interesting examples are within sharing economy initiatives, such as Eatwith, which allows individuals, to eat at private homes of those offering to cook for them. In the area of healthier eating, MyFit- nessPal is a website that helps people count their calories by ente- ring them into an online diary, as well as keeping track of their fitness activity.

In Barcelona, he studies cooking and patisserie in the Hofmann cooking school. He then he moves to Paris to work with Alberto Herráiz at the Fogón Restaurant. In 2010 he goes back to Barcelona and together with his wife, Sofia Boixet and they open the restaurant La Pepita, a modern and innovative tapas pro- posal that leads them to quickly become a gastronomic reference in Barcelo- na. Mateu Casañas met Oriol Castro and Eduard Xatruch 16 years ago in the kitchen of the internationally-recognised elBulli restaurant. Between 1998 and the closure of elBulli, in July 2011, they were part of the creative team in the restaurant kitchen. In 2012 they decided to become business partners. So, in April 2012 the res- taurant Compartir was born. Mas d’en Blei is a privileged place in the Priorat: 7 h. of on the banks of the river Siurana, in the heart of the Priorat county. The vines grow amongst a typical Mediterranean landscape. There, perfectly integrated into the environment, stands our winery and a very old farmhouse. Mainly local varieties such as and were planted. Founded in 1962, is engaged in the production and processing of fine wines from the itself. Its founder, Mr. Francisco Martin Alcoverro (Bot, 1950), is still a professional grower, laid the foundation for market-oriented produc- tion of fine wines, proposing attractive trademarks and more professional management of the winery. All the wines and Cavas from Torelló have their origin in the vineyards of Can Marti, the 135 hectares, (321 acres), estate associated with the Torelló family since 1395 and located in Penedés. Here is where the white varieties of xarel.lo, , parellada, , subirat parent and muscat are grown along with the reds: cabernet sauvig- non, , , and garnacha.
