This research used survey method and laboratory approach. The snacks sampled in this research were obtained directly from the sellers in School. Sampling was done randomly. Each sample was analyzed by using simple borax test kit. Furthermore, the data is reinforced by LABKESDA Laboratory Tangerang. The data were also obtained from interviews with sellers and schools. The results showed that from 19 schools, 16 of them contained borax positively, only three schools were contained borax negatifely. From the results of Laboratory analysis on 98 food samples, 58 (59.79%) positively contained borax and 39 (40.21) did not contain borax. The interviews concluded that sellers are free to sell at school without any prohibition or supervision from the school and related offices. This is because traders sell outside the school fence. Pempek is processed food from fish (snakehead fish) milled, tapioca starch, salt, and water. The dough is shaped into the form called lenjer (small and large lenjer), oyster shape, wrapped in banana leaf, adaan, curly, and submarine. Pempek is generally in wet form. Pempek wet has 50-60% water content, so pempek can last 3-4 days, for that there should be treatment for pempek can last long. This study studied the treatment of various concentrations of CaCl2 with oven drying and freeze drying pressure on rehydration and water content. The treatment of CaCl2 concentration of 0,5%, 1%, 1,5%, 2%, 2,5% and 3% with oven drying had a very significant effect on water content and instant pemper rehydration. Average moisture content is 4,43%, and rehydration or absorbed water is 4,09% per 60 minute.Instant pempek with freeze drying at 0.002 bar pressure, 0.004 bar, 0.006 bar, and 0.008 bar at -50 ° C temperature temperature. The pressure is very significant on water content and rehydration. The average moisture content of 2.85% and rehydration was 45,29% per 20 minute. Mahasiswa termasuk kelompok yang sering mengonsumsi jajanan. Konsumsi jajanan dengan kadar lemak tinggi dapat meningkatkan risiko penyakit tidak menular seperti hipertensi. Penelitian ini bertujuan untuk mengetahui kadar lemak total pada jajanan yang sering dikonsumsi oleh mahasiswa Fakultas Kedokteran Universitas Brawijaya. Penelitian potong lintang ini dilakukan dengan mengumpulkan 32 sampel jajanan yang dipilih dengan non random sampling. Sampel jajanan ini terdiri dari delapan kelompok yaitu kentang goreng, weci, batagor, siomay, taiwan street snacks, roti bakar, batagor, cilok dan jasuke. Kadar lemak total pada jajanan diukur menggunakan metode proksimat. Hasil uji one way ANOVA menunjukkan ada perbedaan yang bermakna pada delapan kelompok jajanan yang diteliti (p < 0,001).     in a nutshell November 2012 Peanut trends insight from the Peanut Institute There’s no doubt that peanuts and peanut butter are adored by many Canadians. In fact, research indicates that peanut products are so popular that nine in 10 Canadians reported having peanuts and/or peanut butter in their homes. With many health benefits, lots of flavour and endless cooking possibilities, what’s not to love? Not only are peanut products a Canadian favourite, they’re also a global favourite. Recently, the Peanut Institute held an event at the Culinary Institute of America where details of the common uses of peanuts around the world were highlighted. Below are some unique culinary highlights: • In West Africa, a peanut sauce made with onions, garlic, peanut butter or paste, along with vegetables like carrots, cabbage and cauliflower, is served by itself or with chicken; people (particularly in Mali) also use peanut butter or paste in a meat stew called maafe; in Ghana, spicy peanut butter soup (nkatenkwan) is a favourite, along with peanut candies/ snacks called kuli-kuli; peanut powder is used as a coating for kebabs in Nigeria and Ghana. • In Malawi and eastern Zambia, peanuts go into relishes to accompany nshima – rolled balls of the nshima cornmeal cakes are dipped into the relishes; thick peanut butter sauces in Uganda accent rice and other starchy foods. • Latin America also provides some examples of ethnic peanut applications: in South America, peanuts go into sauces that accent meat dishes, especially rabbit; in Peru peanuts are roasted with chilies and blended with roasted onions, garlic and oil for a sauce to go with boiled potatoes (papas con ocopa, famous in Arequipa).
