Institute of Food Research and Product Development, Kasetsart University, Chatuchak, Bangkok 10900, Thailand Abstract: Asian foods were studied for antioxidant capacity, total phenolics, and nutritional value. Varieties of commonly consumed foods were selected for the present study. They are chicken curry, spicy stir-fried pork, spicy sausage, curry dip, sate sauce (peanut sauce), and a dessert from black glutinous rice. The foods were packed in retort pouches and sterilized to understand the effect of heat on natural antioxidants to scavenge peroxyl radicals (ORAC assay) and DPPH radicals. One hundred grams of examined foods exhibited antioxidant capacity and total phenolic content ranging from 154.15 to 1499.63 µmole trolox equivalent from 7.46 to 40.16 mg vitamin C equivalent (VCE) and from 14.53 to 145.93 mg gallic acid equivalent, respectively. The top three highest foods in antioxidant capacity were Mu phat phrik khing (40.16 mgVCE/100g), Khua kling mu (31.38 mgVCE/100g) and Nam phrik ong (23.54 mgVCE/100g). The results showed that natural antioxidants retained their activity after thermal processing. Total phenolic content have a positive high correlation (r2 = 0.90) with antioxidant capacity. The determined content of protein, fat, total dietary fiber and energy ranged 1.97-22.74, 2.28-24.97, 1.72-6.77 g/100 g and 125-342 Kcal/100 g, respectively. -

Online Appendix for Harald Hammarstr¨om& Mark Donohue (2014) Some Principles of the Use of Macro-Areas Language Dynamics & Change Harald Hammarstr¨om& Mark Donohue The following document lists the languages of the world and their as- signment to the macro-areas described in the main body of the paper as well as the WALS macro-area for languages featured in the WALS 2005 edi- tion. 7160 languages are included, which represent all languages for which we had coordinates available1. Every language is given with its ISO-639-3 code (if it has one) for proper identification. The mapping between WALS languages and ISO-codes was done by using the mapping downloadable from the 2011 online WALS edition2 (because a number of errors in the mapping were corrected for the 2011 edition). 38 WALS languages are not given an ISO-code in the 2011 mapping, 36 of these have been assigned their appropri- ate iso-code based on the sources the WALS lists for the respective language. This was not possible for Tasmanian (WALS-code: tsm) because the WALS mixes data from very different Tasmanian languages and for Kualan (WALS- code: kua) because no source is given. 17 WALS-languages were assigned ISO-codes which have subsequently been retired { these have been assigned their appropriate updated ISO-code. In many cases, a WALS-language is mapped to several ISO-codes. Thailand MODERATE ADVANCEMENT In 2018, Thailand made a moderate advancement in efforts to eliminate the worst forms of child labor. The government increased its Labor Inspectorate budget by 47 percent and allocated more resources to inspect high-risk workplaces. The rate of access to education and enrollment for migrant children has improved. The government also supported a training for 7,255 labor volunteers on the worst forms of child labor. The government hired 394 additional labor inspectors, including Department of Labor Protection and Welfare civil servants and other government employees, and 22 additional interpreters at Department of Labor Protection and Welfare offices and fishing port inspection centers. The government continued the information-sharing agreement with the U.S. National Center for Missing and Exploited Children to combat online child commercial sexual exploitation. Finally, the government continued to work directly with NGOs to open two additional Child Advocacy Centers, bringing the total to five in Thailand. However, children in Thailand engage in the worst forms of child labor, including in commercial sexual exploitation, sometimes as a result of human trafficking. Children also engage in Muay Thai fighting competitions without protective equipment. Although the government made meaningful efforts in all relevant areas during the reporting period, it does not meet the international standard for the minimum age of work. Enforcement of child labor laws remains a challenge due to an insufficient number of inspectors. I. Authentic Thai Food for the World Green Curry It is good to eat with anything. Let us guess which Thai menu is this. In the past, it was popular to eat with hot rice. Then, it started to be eaten with rice flour noodles. Nowadays, it is popular to eat with roti. Normally, its taste is mild, not too spicy and not too plain, mixed with coconut milk for the grease and using green curry paste. After hearing all this, nearly one hundred percent must answer correctly that the menu being described now is green curry, one of the curries with a long history with the most unique flavor of Thai menus. The background of green curry must turn to the past. Originally, the curry in Thai style was clear curry, like Kaeng Liang or Kaeng Pa. In other words, in the past, Thai people did not eat curry with coconut milk. They only ate clear curry with other ingredients and finely pounded chili. Then, coconut milk was used as an ingredient in food and this was the complete birth of the curry spices. “Kaeng Daeng” or “Kaeng Phet” came from the coconut milk spices with red chili. This spice was later adapted from the red chili to the green chili. That was the origin of the name Kaeng Khiao Wan. It did not come from the sweet taste like everybody understands, but from the color of the curry. When you put the green curry spices into floating undiluted coconut milk, vegetables, and meat, the curry will become a light green color. -
