South Shore Community Action Council is pleased to present you with the Outreach Recipe Booklet. It is a coordinated effort between our Food Resources Program and Outreach Inc. whicb provides provide safe water, food, medical care and education to children and those in need at home and abroad.

We took the time to develop and research recipes that provide some alternative and nutritional approaches to prepare Outreach prepackaged meals of Macaroni & Cheese and Rice & Beans. Outreach Inc. has new and exciting meal options in development so we look forward to the continued growth of our partnership.

PREP TIME 15 MIN. - COOK TIME 55 MIN READY IN 1 HOUR & 10 MIN - SERVINGS 6

INGREDIENTS NEEDED:

• 1 Rice and Bean Meal (Oil as needed) • 2 lg. onions, finely chopped • 2 crushed garlic cloves • 1 - 2 carrots, finely chopped • 1 stalk celery, chopped (optional) • 2/3 c. chopped parsley • 5-6 tsp. dried basiL;1 tsp. dried oregano • 2 lg. tomatoes, coarsely chopped • 4 - 5 tsp. Salt/Pepper to taste • 1/4 - 1/2 c. • 1 c. ( or more) grated Parmesan or Monterey Jack cheese

Step 1 cook meal according to package directions, until tender, approximately 45 minutes. Step 2 sauté onions, garlic, carrots, celery, parsley, basil and oregano in oil until onion is golden. Step 3 add tomatoes, salt, pepper and cooked beans. Step 4 add butter and cheese to cooked rice. Step 5 then add rice mixture to first mixture. Step 6 garnish with more parsley and cheese.

PREP TIME 10 MIN. - COOK TIME 20 MIN READY IN 1/2 HOUR - SERVINGS 6

Ingredients NEEDED:

• 1 Outreach Macaroni and Cheese Dinner • 1 lb. lean ground beef, chicken, or turkey • 1 cup thick and chunky salsa • 2 cups frozen or canned corn, drained (consider no salt added) • 1 can black beans, drained and rinsed (consider no salt added) • 1/2 cup Mexican style shredded cheese • Small can of diced green chillies • 1 teaspoon red pepper flakes

Step 1 prepare outreach macaroni and cheese dinner according to directions; Step 2 remove any excess liquid in a large saute pan, brown the ground meat and drain excess fat. Step 3 stir in chilies, and red pepper flakes. Add macaroni and cheese, corn, beans, and salsa to the meat mixture. Step 4 top with shredded cheese.

PREP TIME 10 MIN. - COOK TIME 40 MIN. READY IN 50 MIN. - SERVINGS 8

INGREDIENTS NEEDED:

• 8 Large flour tortillas • 2 Pounds lean ground beef, chicken, or turkey • 4 Garlic cloves, minced • 2 Teaspoons worcestershire • 2 Teaspoons soy sauce (consider low salt) • 2 Teaspoons red pepper flakes • 16 Oz. Shredded cheese (cheddar, monterey jack, mexican blend) • 1 Package outreach rice and bean dinner

STEP 1 preheat oven to 350 degrees; Step 2 pray cookie sheet or roasting pan with cooking spray. Step 3 prepare outreach rice and bean dinner according to package in- structions using 6 cups of water. Step 4 in a large sauté pan, brown ground meat with garlic, worcestershire, soy sauce, and red pepper flakes. Step 5 drain excess fat. Step 6 combine rice and bean and meat mixtures together. Step 7 fill each tortilla with 1 cup of rice and meat mixture; top with 1/4 cup shredded cheese.

10 STEP 8 Wrap tortilla by folding sides into the middle, then roll front to back. STEP 9 Place in prepared dish; top with additional cheese if preferred. STEP 10 Bake at 350 degrees Fahrenheit for 30 minutes. STEP 11 Serve with low fat sour cream, salsa, and hot sauce if desired.

11 STOVE-TOP BUTTERNUT SQUASH MACaroni & CHEESE Adapted From Kitchen Treaty.com: Stove - Top - Butternut - Squash - Mac - Cheese

PREP TIME 15 MIN. - COOK TIME 10 MIN READY IN 25 MIN - SERVINGS 4-6

Ingredients NEEDED:

• 1 Outreach macaroni and cheese dinner • 4 Cups butternut squash, peeled, seeded, and cubed (about one 2 1/2 pound squash) • 1 Pint (2 cups) heavy whipping cream • 1 Teaspoon fresh thyme leaves (or 1/2 teaspoon dried) • 1 Teaspoon dijon mustard • 1/4 Teaspoon kosher salt + more for cooking the and squash + more to taste, if desired • 1/4 Teaspoons freshly ground black pepper + more to taste • 4 Cups shredded sharp (16 ounces)

Step 1 prepare outreach macaroni and cheese dinner according to directions; Step 2 while the pasta cooks, make the sauce. Fill a medium pot halfway with water and add a pinch of salt. Set on the stove over high heat. Add the butternut squash and bring to a boil. Cook until tender, 5 - 6 minutes. Drain the water and set the cooked squash aside.

12 Step 3 reduce heat to medium and return the pot to the stove. Add the heavy whipping cream, thyme, dijon mustard, 1/4 teaspoon kosher salt, and 1/4 teaspoon pepper. Cook, stirring frequently with a whisk, until thickened slightly, 3 - 4 minutes. Add back the butter- nut squash. Step 4 remove from heat and either (carefully!) Use an immersion blender to completely puree the sauce, or pour into a blender to puree. Return to the pot. Add the cheese, stirring until melted. Taste the sauce and add additional salt and pepper if desired. Add the pasta to the sauce and stir gently until all of the pasta is coated. Serve.

13 Pineapple Black Bean Salad Adapted from Budget Bytes.COM PREP TIME 30 MIN. - COOK TIME 30 MIN READY IN 1 HOUR - SERVINGS 6

INGREDIENTS NEEDED:

• Salad: • 1 Rice and bean meal • 1/2 Bunch cilantro • 1/3 Cup unsalted cashews • 1 15Oz. Can pineapple tidbits in juice; lime vinaigrette: • 1 Lime, juiced (3 - 4 tbsp) • 2 Tbsp • 1 Tbsp honey • 1/2 Tsp cumin • 1/4 Tsp garlic powder • 1/2 Tsp salt

Step 1 cook the bulgur or grain according to the package directions.* Allow the grains to cool completely. Place the pot in the refrigerator to quicken the cooling, if needed. Step 2 prepare the dressing by whisking together the lime juice, olive oil, honey, cumin, garlic powder, and salt. Set the dressing aside Step 3 drain the pineapple tidbits very well. Roughly chop the pineapple into slightly smaller pieces. Roughly chop the cashews. Pull the ci- lantro from the stems and roughly chop the leaves. Rinse and drain the black beans well. Combine the pineapple, cashews, cilantro, and black beans in a bowl.

14 Step 4 add the cooked and cooled bulgur and the dressing to the bowl. Toss the ingredients together until everything is evenly mixed and coated in dressing. Serve immediately or chill until ready to serve.

Note: *many grains require a 2: 1 water to grain ratio for cooking. For grain salads, i like to use a - little less water (1.5: 1 Or 1.75: 1) To keep the grains chewy and prevent them from becoming sticky.

15 Mac and Cheese Taco Bake Adapted from Kraft Taco Bake Recipe, Marcia Richards

PREP TIME 10 MIN. - COOK TIME 20 MIN READY IN 1/2 HOUR - SERVINGS 6

Ingredients NEEDED:

• 1 Outreach Macaroni and Cheese Dinner • 1 lb. lean ground beef, chicken, or turkey • 1 package taco seasoning mix • 3/4 cup sour cream (consider low fat) • 1 1/2 cups shredded cheddar cheese, divided • 1 cup thick and chunky salsa • 1 can black beans - drained and rinsed (consider no added salt) • 1 can Mexican style corn - drained (consider no added salt) • 1 teaspoon red pepper flakes

STEP 1 preheat oven to 400 degrees fahrenheit. Spray an 8 inch square dish with cooking spray. Step 2 cook outreach macaroni and cheese dinner according to package instructions; add sour cream to prepared dinner. Step 3 in a large saute pan, cook ground meat with taco seasoning according packet instructions; drain excess fat. Step 4 add drained corn and black beans to meat mixture; add red pepper flakes.

16 STEP 5 Spoon some of the macaroni and cheese dinner mixture into the 8 inch dish; top with layer of meat mixture, 1 cup shredded cheese, and another layer of macaroni and cheese dinner mixture. There may be some macaroni and cheese mixture left. STEP 6 Top with salsa and remaining cheese. STEP 7 Bake uncovered for 5 minutes or until the cheese is melted.

17 RICE AND BLACK BEAN CASSEROLE Adapted from green valley kitchen

PREP TIME 30 MIN. - COOK TIME 40 MIN. READY IN 1 HOUR & 10 MIN. - SERVINGS 6 Ingredients Needed:

• 1 package OUTREACH Rice and Bean Dinner • 1 bouillon cube • ½ lime - juiced • 1 bag of spinach • 1 garlic clove - minced • 1 10 oz package frozen corn • 4 scallions - chopped • 1 medium zucchini- grated

Step 1 preheat oven to 350 degrees. Step 2 cook outreach rice and bean dinner per package directions - add bouillon cube to water. When done, let rice sit covered for 10 miutes. After rice has cooled, fluff and toss with lime juice. Step 3 add rice to a large bowl. You’ll be adding all the ingredients in to this bowl. Step 4 drain black beans and add to bowl. Step 5 saute spinach and minced garlic in a little oil until slightly wilted. Add to bowl. Step 6 add corn and scallions to saute pan and cook over medium heat for 3 minutes. Add corn and scallions to bowl. Step 7 grate zucchini and add to bowl. Step 8 add salsa to bowl.

18 Step 9 add can of diced tomatoes (and juice in the can) to the bowl. Step 10 add 1 cup of grated cheese to the bowl. Step 11 mix everything together in the bowl. Step 12 lightly grease a 10 x 8 casserole. Step 13 pour rice and black bean mixture in to casserole pan. Step 14 top mixture with remaining 1 cup of grated cheese. Step 15 bake in the oven for 40 minutes. Step 16 remove and sprinkle minced parsley over the top as a garnish.

19 Cheesy Tuna Mac Recipe Adapted from Kraft TUNA MAC Recipe

PREP TIME 15 MIN. - COOK TIME 10 MIN READY IN 25 MIN. - SERVINGS 4

Ingredients NEEDED:

• 1 Outreach Macaroni and Cheese Dinner • 1 can (10 - 3/ 4 ounces) condensed cream of broccoli soup, undiluted • 1 can (6 ounces) tuna, drained and flaked • 3/4 cup frozen • 2 tablespoons finely chopped onion • 1 tablespoon process cheese sauce

Step 1 cook outreach macaroni and cheese according to package directions; Step 2 add the soup, tuna, peas, onion and cheese sauce. Step 3 spoon into a greased 1 - 1/2 - qt. Baking dish. Cover and bake at 350° for 20 minutes. Step 4 uncover; bake 5 - 10 minutes longer or until heated through.

20 21 BEAN and rice soup Adapted from COOKS.COM

PREP TIME 30 MIN. - COOK TIME 40 MIN. READY IN 1 HOUR & 10 MIN. - SERVINGS 6

Ingredients Needed:

• 1 package OUTREACH Rice and Bean Dinner • 2 lbs. ground beef • 1 onion (chopped or sliced) • Spices: Chili powder, garlic salt, pepper • 2 lg. tomatoes (diced) • 1 /2 c. mild picante sauce • 6 - 8 c. water or beef broth

Step 1 brown the onions, beef and spices to taste. Step 2 when browned add rice and tomatoes and stir frequently until rice is browned. Drain off grease. Step 3 cook outreach rice and bean dinner per package directions Step 4 stir in picante sauce and water. Step 5 serve with hot buttered cornbread or tortilla chips.

Note: This recipe can be converted to a tasty casserole by reducing water or broth to 4 - 5 cups and topped with grated Monterey Jack.

22 23 Taco Bake Adapted from Kraft Taco Bake Recipe

PREP TIME 15 MIN. - COOK TIME 10 MIN READY IN 25 MIN. - SERVINGS 4 - 6

Ingredients NEEDED:

• 1 Outreach Macaroni and Cheese Dinner • 1 lb. ground beef • 1 pkg. (1 - 1/4 oz.) TACO BELL® Taco Seasoning Mix • 3/4 cup BREAKSTONE’S or KNUDSEN Sour Cream • 1 - 1/2 cups KRAFT Shredded Cheddar Cheese, divided • 3/4 cup TACO BELL® Thick & Chunky Salsa

Step 1 heat oven to 400°F. Step 2 cook outreach macaroni and cheese according to package directions; Step 3 while macaroni is cooking, cook meat with taco seasoning as directed on package. Step 4 stir sour cream into prepared dinner; Step 5 spoon half the dinner mixture into 8 - inch square baking dish sprayed with cooking spray. Step 6 top with layers of meat mixture, 1 cup shredded cheese and remaining dinner mixture; cover Step 7 bake 15 min.; Top with salsa and remaining shredded cheese. Bake, uncovered, 5 min. Or until cheese is melted.

24 25 Sausage BEAN CASSEROLE Adapted from COOKS.COM

PREP TIME 30 MIN. - COOK TIME 40 MIN. READY IN 1 HOUR & 10 MIN. - SERVINGS 6

Ingredients Needed:

• 1 package OUTREACH Rice and Bean Dinner • 1 lb. breakfast sausage • 6 slices American cheese • 1 can cream of mushroom soup • 3 c. cooked pinto beans • 1/4 tsp. minced onion • Salt and pepper, to taste

Step 1 cook outreach rice and bean dinner per package directions Step 2 mix with mushroom soup. Step 3 crumble breakfast sausage in skillet and cook. Step 4 drain on paper towel. Step 5 layer casserole dish in this order: 1. Outreach rice and bean soup mixture 2. Crumbled sausage 3. Slices cheese 4. Minced onion, sprinkle 5. 3 Slices cheese Step 6 heat in oven until cheese melts. Option: you may use cheddar cheese!

PREP TIME 10 MIN. - COOK TIME 10 MIN READY IN 25 MIN. - SERVINGS 4

Ingredients NEEDED:

• 1 Outreach Macaroni and Cheese Dinner • 1 lb. ground beef • 1 (15 oz) can sauce • 1 pkg. (1 - 1/4 oz.) TACO BELL® Taco Seasoning Mix • 2 Tbsp brown sugar • 1/4 cups sour cream

Step 1 cook outreach macaroni and cheese according to package directions; Step 2 while macaroni is cooking, brown and drain fat. Step 3 mix meat with the outreach macaroni and cheese, taco seasoing as directed on package, tomato sauce, brown sugar, and sour cream. Stir and keep warm. Step 4 stir and season additionally with salt and pepper, if needed. Serve hot.

28 29 RICE AND BEAN Taco Bake

PREP TIME 5 MIN. - COOK TIME 10 MIN READY IN 20 MIN. - SERVINGS 4 - 6

Ingredients NEEDED:

• 1 package OUTREACH Rice and Bean Dinner • 1 lb. ground beef • 1 pkg. (1 - 1/4 oz.) TACO BELL® Taco Seasoning Mix

Step 1 cook outreach rice and bean dinner according to package directions; Step 3 while rice and beans are cooking, cook meat Step 4 add taco seasoning as directed on package. Step 5 add cooked rice and bean dinner.

30 31 CHICKEN MAC AND CHEESE RECIPE Adapted from ADD A PINCH

PREP TIME 15 MIN. - COOK TIME 45 MIN READY IN 1 hour - SERVINGS 16

Ingredients NEEDED:

• 1 Outreach Macaroni and Cheese Dinner • 6 boneless, skinless chicken breasts or thighs • 2 10¾ ounce cans cream of mushroom soup • 2 cups chicken stock • ½ cup onion, chopped • 2 cloves garlic, chopped • 3 heaping tablespoons mayonnaise • ¾ cup pimento pepper, chopped (large jar) • 1 large sleeve Ritz crackers, crushed (optional)

Step 1 preheat oven to 350 degrees. Step 2 cook chicken, covered with water, in a large stockpot over medium heat until tender, about 20 minutes. Remove chicken from stockpot with a slotted spoon and set aside to cool. Step 3 cook outreach macaroni and cheese according to package directions; Step 4 add noodles and chicken to a large mixing bowl. Add remaining ingredients and stir until well - combined. Step 5 pour into two 9x13 casserole pans. Step 6 cover with ritz crackers on top. (Optional) Step 7 bake at 350º degrees for 30 minutes. Step 8 place in preheated oven and cook for 30 minutes.
