INTRODUCTION TO VITICULTURE AND OENOLOGY
Introduction to the principles of viticulture including: Vine physiology, ecophysiology and morphology. Ampelography, training systems, vineyard floor management, pathology and other technical practices in viticulture. An introduction to oenology, including grape maturation, fermentation, winery operations, aging and wine preservation. Introduction to sensory analysis.
